We start from scratch. Your teacher, Vanessa, will guide you through making a classic French short crust pastry (pâte sucrée) — the right texture, the right technique. You'll understand why each step matters, so you can replicate it at home with confidence.

You'll learn how to line your tart tin properly — no shrinking, no cracking. This is one of the most underrated skills in French patisserie, and once you've got it, it changes everything.

Here's where your chosen flavour comes to life. For the Chocolate & Praline tart, you'll make a hazelnut praline cream and a silky dark chocolate ganache using authentic imported French chocolate. For the Lemon Meringue tart, you'll prepare a classic French lemon cream and a glossy Italian meringue, torched to perfection.

With your shell baked and your filling ready, you'll bring it all together. Vanessa will show you how to layer, set, and build each component for the right texture and balance in every slice.

You can choose your flavour when you book! Your options are:
  • Chocolate & Praline Tart (Tarte Chocolat Praliné): Crisp shortcrust pastry, hazelnut praline cream, and a glossy dark chocolate ganache made with authentic imported French chocolate.
  • Lemon Meringue Tart (Tarte Citron Meringuée): Crisp shortcrust pastry, silky French lemon cream, and a perfectly torched Italian meringue. Bright, elegant, and unmistakably French.
Both versions are made entirely from scratch using traditional Grand Chef recipes. This is not a demonstration; you'll work through every component hands-on, with Vanessa guiding you step by step.

There is a gluten-free option available, just mention it at booking, and Vanessa will adapt accordingly. Classes are kept deliberately small — typically 3 to 4 guests — so you get real attention throughout.

​I do not just do demonstrations; I offer a full hands on experience where you will do everything from A to Z. We always take a break in the middle for a tasting session, allowing us to relax and enjoy the moment de détente together. It is not just a class; it is a connection.

​Building on this intimate experience, I also offer boutique Team Building sessions and private events. Baking together is a fantastic way to foster communication and creativity within a team all while having fun! I can host these at my studio or travel to your office or home kitchen for birthdays and corporate gatherings.
​For those looking for a cultural twist, I also provide a total French immersion. Having hosted several groups wanting a day in Paris vibe, I can conduct the entire workshop in French. It is a wonderful way to practice the language while whisking a chocolate ganache!
