The extra questions he took the time to answer. • 5/5 from Thanh Hoang, attended May 2025: Paul, our teacher was great! He showed us plenty of professional techniques on cutting and maintaining knives we can apply everyday. Not only these techniques will help us get the best flavour of ingredients but they will also make all our dishes look restaurant-like. I also went to his meat cooking class and both classes are fantastic! I totally recommend Paul and taking this class

  • 5/5 from Lan Wei, attended Mar 2025: This was exactly what we wanted! A very tightly run, jam packed session teaching us knife skills to quickly and expertly prepare vegetables. Learned a lot. Suitable for home cooks who have never been formally taught how to slice vegetables properly.
  • 5/5 from Camille Leclere, attended Mar 2025: Took the knife skill class with Paul. Everyone cooking at home should do it! Learnt the basics through theory and application: from how to hold your knife, two moves to cut safely without bursting food, sharpening your knife and going through a variety of food types (veggie, condiments, meat) Paul is an amazing instructor, calm, precise, and supportive. Cherry on top, we ended up with a yummy Asian Chicken Salad! Needless to say that from that day onwards I’ve been slicing, dicing, slivering like a champ with the sharpest knife in my life!
  • 5/5 from Caroline Wagner, attended Feb 2025: Informative and easy to follow and retain. Teacher was friendly and helpful. Felt like i gained a lot as someone who is not a visual learner. I am not a very experienced cook but even my much more experienced friends and partner felt it was worthwhile.

  • 5/5 from Garry Wayling, attended Feb 2024: The experience and knowledge of Paul our class teacher shone through at every turn of the blade. In addition to learning the basics of knife skills there were many other kitchen and food tips thrown out by Paul throughout the session. Really appreciated the time and now it is up to me to practice!
  • 5/5 from Kate May, attended Feb 2024: I learnt so much in this class! I thought I was vaguely competent with knifes in the kitchen before the class (but occasionally still knocked a finger). From the first few minutes (of learning the grip) I knew that I’d feel more confident and never imagined I’d be trying some of the skills the instructor taught. Highly recommend for anyone who wants to cut down their prep time in the kitchen or feel more confident using sharp knifes.
  • 5/5 from Bonnie Werner, attended Feb 2024: This class was fantastic, I learned so much! Such a valuable experience and a great gift idea.
  • 5/5 from Sejal McDougall, attended Aug 2023: Coming into the class I was used to small knives (generally quite blunt) and was actually a little afraid of big sharp knives. Well I'm a changed person now. It's all in the hold and control. I never thought I would be so happy with chopping. Fabulous class. Would highly recommend. Paul was wonderful and knew his stuff. Class is 1.5 hours but easily could go on 2 hours with the many questions. The chicken salad is divine too.
  • 5/5 from Yoav Dolev, attended Jun 2023: Paul is an excellent teacher. Very clear, professional and patient. He knows how to adapt to each learner's pace while keeping the lesson moving. I had a great time.
  • 5/5 from Jason Denny, attended May 2023: I grew up in a household that loved to cook. Most of the fundamentals were taught to me at a young age when I used to assist my parents with prep work. Fast forward twenty years and I've started cooking at home for my family and found myself questioning my knowledge on some of the basics (eg. am I honing this japanese knife correctly; is there a faster way to dice this onion; etc). This class reinforced what I was taught when I was in my youth which were just the basics plus I learned a few new tricks (preparing julienned capsicum and carrots). The instructor was super nice and helpful. Would recommend this class to anyone that wants to learn how to handle a knife safely in the kitchen; learn a few tricks; or speed up their prep work. Nothing fancy. Just the basics which is more than most people have under their belt!
  • 5/5 from Shivani Patel, attended May 2023: Teacher was really knowledgeable and helpful! I had so much fun. Definitely recommend this class (perfect for beginners).
  • 5/5 from Vinita Israni, attended Mar 2023: Wonderful class - very applicable techniques and easy explanations that helped us get the most out of the class!
  • 5/5 from Amelia Alice, attended Jan 2023: Great class and teacher, lots of fun for the whole family. I would recommend this to anyone moving out of home.
  • 5/5 from Jacqueline Mann, attended Oct 2022: Paul was extremely knowledgeable, clear and concise. Encouraging and able to offer advice and adjustments with kindness. The venue was perfectly set out and functional. We were provided everything we needed. Paul took the time to explain and allow opportunity to practice. I feel more confident in my knife skills with new techniques to hone.
  • 5/5 from Natalie Costello, attended Oct 2022: Amazing class! I gained soooo much! Very happy with my time and money investment. Thank you Paul!
  • 5/5 from Erin Au, attended Sep 2022: Great and fun class for both beginners and people looking to brush up their knife skills. Paul has a friendly and patient approach and was extremely knowledgeable. It was awesome to learn knife skills and handy tips and tricks around the kitchen!
  • 5/5 from Andy Adam, attended Aug 2022: Great teacher - professional and friendly. Small class size, great for picking up some key skills.
  • 5/5 from Brendan Helsham, attended Jun 2022: Paul was fantastic, he explained things clearly and concisely. It was clear that he was an expert in what he was teaching us and was able to also pass on many other nuggets of information as part of his instruction. Also, it was nice to just dive right in and not waste time going around the room introducing ourselves like so many of these types of courses persist with; the reality is that the other attendees couldn't care less why I'm there and what I want to get out of the course
  • 5/5 from Rebecca Skill, attended May 2022: Great skills from the chef! Highly recommended hour and a half and leave with a salad.
  • 5/5 from Luke Hancock, attended Jan 2022: Instructor provided clear and helpful lessons that have helped set a strong foundation to refine through practice
  • 5/5 from John Warburton, attended Feb 2021: Wish I’d done this workshop 40 years ago. The techniques, tips and tricks are invaluable for any home cook, as is the information about knife safety, selection and maintenance. As one of the other participants said, they should teach this stuff at school!
