Delve into a complete chocolate journey from bean to bar with Royal Show award-winning chocolatiers Willow and Catherine Francis of Reverence Chocolate in this sweet Perth workshop!

Chocolate is one of the world’s greatest pleasures and can be healthy... but it is eating the right type of chocolate that makes the difference. Once a delicacy in its purest form, the cacao bean is now commonly roasted and combined with sugar and milk powder. But the tide has turned and knowledge about raw cacao is returning.

Luckily in this workshop, you learn how and why to eat it raw and make delicious chocolate yourself. Hurray!

In this workshop, which is perfect for beginners and all chocolate lovers, you will:

  • Consume an abundance of divine high-quality chocolate.
  • Explore the fascinating and magical journey of chocolate through the ages.
  • Discover leading-edge research on real chocolate’s positive impact on the heart, focus, energy, weight loss (yes, really), blood sugar stabilisation and wellbeing.
  • Sample delicious and nourishing alternatives to fattening and sugar-loaded sweet treats and caffeine for your energy and emotional satiation.
  • Learn how to further incorporate healthy chocolate consumption into your life.

You will also receive a chocolate-making kit and secret recipe booklet from the experts so you can get started immediately making your very own chocolate and cacao drinks at home (without the refined sugar, dairy or fillers and with a taste that you and your family will love).

Why is it so exciting to learn to make top quality raw chocolate?
  • When you taste freshly made raw chocolate, you’ll be astounded by its depth, richness and full flavour.
  • Cacao is one of the richest sources of antioxidants of any food. Antioxidants are destroyed when the cacao bean is roasted (a process employed by all commercial chocolate makers).
  • Cacao contains super-high amounts of magnesium! Among many other effects, magnesium can assist in supporting the heart, lowering blood pressure and reducing cholesterol!
  • All the recipes are dairy-free. Milk chocolate is made with extracted dairy solids containing casein - the animal protein in milk which inhibits antioxidant absorption.
  • Raw chocolate directly stimulates and provides valuable neurotransmitters (such as serotonin and dopamine) to help increase resilience to stress, concentration and heighten a sense of well being!
  • The recipes are refined sugar-free. To gain such a sweet taste, processed chocolate contains a very high sugar content, stimulating our taste buds and making it more addictive. When you make your own recipes you can use natural sweeteners such as agave, dates, dried super-fruits or raw honey instead.
  • Chocolate is considered a mild aphrodisiac and libido enhancer! These aphrodisiac properties are destroyed when cacao beans are roasted. How sad!

Willow Francis and Catherine Francis have been gourmet artisan chocolatiers in Western Australia since 2008. They have travelled to Guatemala, Hawaii, Indonesia, Europe and beyond in their desire to explore and immerse themselves into the world of chocolate. They reside in Fremantle and focus on education.

Catherine Francis a qualified physiotherapist majoring in anatomy, human biology and psychology. Since 2008, she has focused on combining her knowledge and understanding of the physiology of the body, the psychology of eating, with her passion for outstanding food and nutrition.

Willow Francis has spent over 20 years working in the western medical model. Over the past 12 years he has moved towards more sustainable and holistic health modalities. Willow has made over a tonne of chocolate and continues to be passionate about quality, alchemy and flavour.
