Friday evening: Ease into it

Start things off slow. Newcastle isn't a city that rewards rushing, so check into your accommodation, drop your bags, and head straight for the foreshore. Honeysuckle Foreshore is the obvious choice for a first-night stroll—the boardwalk hugs the harbour, the light show on the old silos puts on a show after dark, and there's no shortage of bars and restaurants if you just want a glass of wine and a feed before bed. 

If you're feeling peckish, the Darby Street strip is only a short drive away and stays lively well into the evening.

Saturday morning: Walk it off

Newcastle's coastline is the city's best-kept open secret, and the Bathers Way coastal walk is the way to see it. Stretching roughly six kilometres from Nobbys Beach to Merewether, the path takes you past lighthouses, ocean baths, and some of the best surf breaks on the east coast. Grab a coffee from one of the cafes near Newcastle Beach and walk it in either direction—you don't need to do the whole thing in one go, and there are plenty of spots to stop, swim, or just sit and watch the surfers.

If you time it right, climb Nobbys Head before the walk to get your bearings. The views back over the harbour and out to the breakwall are worth the short, steep effort, and it's a genuinely lovely way to start the day before the sun gets too strong.

Saturday midday: Get hands-on with a local workshop

Once you’ve dried off and grabbed a casual bite to eat, it is time to experience the creative heartbeat of the city. Newcastle has evolved into a massive sanctuary for artists and makers, and there is no better way to tap into that energy than by learning a new skill.

You can book into incredible, locally run workshops that get your hands dirty and introduce you to Newcastle’s resident creatives.

  • Flavours of Southern Italy Cooking Class (Tighes Hill): For the foodies, spending a couple of hours learning how to make classic Southern Italian dishes is pure joy. The best part? You get to sit down and devour your creations in a restaurant-style setting afterwards.
  • Spirits Blending Class (Carrington): Step into a boutique local distillery space and learn the history of spirit making, experiment with local botanicals, and blend a custom bottle of gin or vodka to take home with you. The perfect gift for a Newcastle local or visitor! 
  • Shell Sandcasting Workshop (Soldiers Point): For something coastal-themed that ties straight back into the weekend you're having, keep an eye out for a shell sandcasting workshop, where you'll learn to cast a pendant using real seashells—a lovely, on-theme souvenir if you're already spending your days by the water.

Saturday evening: Eat like a local

Newcastle's food scene has quietly become one of the best in regional Australia, and the Hunter region right on its doorstep means produce and wine are never an issue. 

Rustica Newcastle Beach has been a local favourite since 2011, serving traditional Mediterranean cuisine with a twist and a genuinely spectacular view over Newcastle Beach—ask for a table by the window and watch the surf while you eat. Or stay closer to the city centre for Ginger Meg's, an Asian fusion restaurant and bar serving bold Southeast Asian flavours. 

Sunday morning: Markets and a slow coffee

Sunday is for slowing right down. If your visit lines up with the Newcastle City Farmers Market, set aside an hour to wander the stalls—local produce, flowers, and handmade goods make for an easy, low-effort morning. Pair it with a coffee from one of the city's well-loved roasters before deciding how to spend your last few hours in town.

Sunday afternoon: One last adventure

Before you head home, squeeze in whatever you didn't get to on Saturday. That might mean finishing the rest of the Bathers Way walk or fitting in one more creative session—watercolour painting is a relaxed way to wind the weekend down without much physical effort required. A dried flower arranging class is another lovely option if you'd rather finish your trip surrounded by greenery.
