I am originally from France and have been a pastry chef for 25 years. For the past 14 years I have been living in Sydney.
From 2010 to 2015 I was a teacher at the renowned culinary school “Le Cordon Bleu” in Ryde, and taught patisserie demonstrations and private classes. In 2012 I started my own business, Patisserie le Marais in Bondi and have since moved it to Maroubra. My favourite things to teach are croissants, Danish pastries and puff pastry products. I really love these products because you can do so so much with them.

Joined the class for an anniversary to finally learn how to make croissants properly.
The class was extremely well organised- everything was provided in a easy to understand and access manner and the instructor was extremely well prepared. We felt supported and assisted through the whole process and learned a great deal more than just the base baking process.
Would recommend this to anyone, regardless of skill level.

I booked a class with Joel and two other people for my birthday. Joel was just the most charismatic and funny character. He is a great teacher and is very patient despite cracking many jokes about the impatience that comes with professional baking! He kept us laughing, fed and our morale high and was always dashing around supporting us through the steps. I loved his stories about his time is Paris and his family. The venue was inconspicuous from the outside but more than enough space for 11 (including the teacher) people that were there. Joel provided a copy of the recipe, access to flour, water and other refreshments (tea, juice, coffee) and let us eat his examples of the pastries so that we can take our own home, which I thought was so considerate and great as I got to go home and share it with my family. I'm not a baker, and to be honest I didn't do well in the class but it's definitely helped me gain some confidence in that department. Joel let us take home dough to bake at a later date and gave us more than plenty suggestions (splitting up the process in days over the week) and even suggested other dishes such as pizza to make with them. It was important that my partner and best friend enjoyed the experience as well as it was a booking to celebrate my birthday, and they absolutely adored Joel! For all the 30 years of experience Joel has done in his profession, the class was good value for my money- only a skilled professional like Joel could essentially babysit 10 completely novice bakers and help them bake puff pastry that were extremely good to eat.

I was given this experience for my birthday. I loved it. Joel was an amazing teacher - he had lots of great stories about his vast experience as a pastry chef. His kitchen was a safe space to make mistakes and learn, Joel helped trouble shoot and everything turned out very yummy. I loved that we got both pastries and dough to take home. The croissant and Danish pastry making class was even better than anticipated! My husband and I went in with high expectations as Joel’s credentials included teaching at Cordon Bleu and we weren’t disappointed - his passion for baking was contagious, and he was very patient with those of us who had very little experience/knowledge… he told us stories of his learning experiences in Paris, to illustrate why certain steps were important in preparing the dough, and explained the different properties between various types of ingredients.

Apart from croissant and Danish pastries, he also took us through puff pastry making, and a quick sponge cake. The class took us through all the steps of croissant making, from making the dough (which we had to proof, so we got to take it home to make more croissants/danishes ourselves!) to the laminating, shaping, baking, decorating (using dough he had prepared), which meant we had heaps of pastries at the end of the day to take back

Warning though - go on an empty stomach as you get to sample all of Joel’s pastries that he does as examples, including Palmiers, pain au chocolat, Danishes, Bear Claw and we even had some Bon Vivant cake

Doing the class in person was great as it allowed Joel to correct and help us if our dough wasn’t right, and he could give us tips that we would have struggled with doing it via online videos.

The class was really worth doing, and we would love to go back for some Macaron classes next!

Joel was a great teacher! He was personable, gave easy and clear instructions, and came well prepared for the class including drinks and snacks! The kitchen easily fit everyone in the class and the group we had was easygoing. Joel said that the kitchen was going to be remodeled soon, so I'm sure the new space will be top notch when it's done! I think the course was great value for money. I learned a lot, and despite having issues with my pastry we managed to resolve the issue and get back on track, and my croissants turned out better than expected! I was able to share my croissants and danishes with family and friends when I took them home, and they were a hit! We made a croissant dough ball from scratch to take home, so I've practiced the techniques again and made another batch of croissants to freeze - we'll see how they turn out!

Can’t rate this more highly, a great father daughter experience learning the secrets to macaron baking. We went away having had a fabulous time, learning a lot. Guided by a brilliant enthusiastic Le cordon Bleu trained chef Joel had infinite patience and passion for what he did. Guiding us through all the processes and we both walked away happy and with macaron and a beautiful macaron cake in our choice of colours. Highly recommended. A small intimate patisserie with great free parking opposite and an after hours time slot which made this an easy fit. Magnifique! Booked this as a birthday present for my partner because he LOVES croissants. Such a fun day and I have a new found appreciation for the work and effort that goes into French pastries! Can’t believe we made so many yummy treats to take home after. You get to prepare the dough from scratch and take a bag of the it home so you can make your own later croissants :) Also creativity is encourage so you can run wild with your imagination which was really nice . 10 out of 10!

Today I am so lucky to be the only one person to learn how to make macaron. Teacher is from France.He is professional with teaching work and is so enthusiastic. Before we started he prepare everything well and I follow his step. We talked a lot about the cake and his experience. He has a 35-year-work Experience. That is really amazing. So don't care about the details. He can manage all that thing. Finally I successfully make the macaron and it's so easy of course it can't be so smooth withdout the help of the teacher. Chef Joel was easy and fun to talk to. He made French Croissant baking look easy while thoroughly discussing the step-by-step process. Being from Western Sydney, the venue was a bit far but I would say it was worth the trip. Everything was provided so you don't have to bring anything. We were even able to take home all the bread we made plus a dough we could use again to create more bread after the class. We would definitely consider his other classes in the future.

Perfect class for us! A team of TAX ACCOUNTANT! We arrived with no baking experience, but we were curious and wanted to learn as well as have fun at the same time. We ended up learned a lot by doing. Joel is fanastique! Our instructor made this such a successful experience. Well organized, efficient, funny, with many practical tips for baking. His love of baking really came through. He worked with each one of us to make sure we understood what we were supposed to do and gave us good tips on relaxing and enjoying the process as well as the reasons behind his tips. All the team members thoroughly enjoyed this class and recommend it. But be warned, you'll walk out of there with a ton of croissants and Danish, so you may have to cut out all other carbs for a few days to make up for eating your delicious baked goods!

I really enjoyed this course. I basically had a private class because I was the only person who booked that particular time slot. Joel is a lovely teacher who really enjoys teaching and is so good at it. I really learned a lot, got to work with fresh and high quality ingredients and left the class with a big box of beautiful macarons.

Fantastic day of making croissants and danish pastries from scratch! Our teacher, Joel, kindly prepared the dough in advance (as it takes time to prove) and we then laminated, proved, shaped and baked our croissants. We also made the dough from scratch to take home. Joel is extremely knowledge and helpful, he is willing to answer any questions the class had. I came away with lots of pastries to enjoy, but also a better understanding of how to make pastries . I have wanted to try this class for so long and was so happy that I finally got the chance. Joel is a wonderful teacher, he was calm and patient and so full of knowledge. I enjoyed learning about the lamination process. He gave tips on what are the best quality ingredients to buy for pastry making. We got to take home dough (to try for ourselves on the weekend), and 2 boxes full of croissants, danish pastries and also my favourite things ever Palmiers Fresh out the oven. Not going to lie, I ate 5 of them Thank you for a wonderful experience. Highly recommended, do it, you won't be disappointed.

Joel was just fantastic as a teacher. Very passionate about helping others get the macarons just perfect.
We really enjoyed it and the time went so quickly. Got to take home a large macaron as well as some smaller ones. They were delicious!
Venue was easy to find, and parking right across the road.

What a great Sunday. The course delivered way more than expected. Joel taught us to make beautiful pastries and croissants. We went home with dough ready for croissant making and two big boxes full of pastries and croissants that he taught us to make. Great value.

Parking was really easy and the venue provided an insight into the space bakers work in, as well as how hard they work!

What an amazing class! Joal is an incredible teacher who is passionate about his craft as a pastry chef. I learnt such a lot - thanks to Joel's clear, patient instruction. Joel was great at teaching us, he was hands on, nice and made the class a very enjoyable lesson! We made danishes, croissants and Joel demonstrated making puff pastry which he then created palmiers out of for everyone to eat. He also had tea and raspberry chocolate mousse for us to snack on during the class. A great day well spent!

It is quite a long class though running for over 5 hours so make sure you wear comfortable clothes and shoes

I do not know where to start. Having tried unsuccessfully over the past few months to make croissants and being glued to Youtube with its enormous offering of experts I was getting fed up. No more! The day spent with Joel in Maroubra was, for me, nothing short of magical.
Joel himself has that perfect tutor combination of expertise, practical proof in the business he and his wife run, friendliness, and the ability to let "students" try but be there to help if needed. To finish the day by taking home the croissants and Danish pastries made by one-self and the knowledge to continue into the future was worth

I really enjoyed the class taught by Joel last Sunday. Lots of tips provided throughout. We got to make fantastic croissants and scrumptious Danish pastries which we got to take home for taste testing by the family!

Joel was a great teacher. Going through details and answering any questions that arose during the process. He demonstrated the techniques and the. Was on hand to assist if anyone required it.
We learnt how to make the dough, laminate the butter through the dough and fold it. And then made danishes and croissants.
We had a lovely pizza for lunch and got to toast some yummy palmiers made from the puff pastry Joel made.
The class is great value for money and everyone went home with two boxes of goodies, if not more.
10/10 would recommend it if you want to learn to make croissants

Joel Bardan is an excellent teacher and I absolutely loved this class. Joel manages to clearly explain the concepts, demonstrate and then let you do it all over again, all whilst keeping a close eye on all students. The class is also lots and lots of fun. This is the second class I have done with him (first one being the croissant making class which was equally excellent) and I will certainly do any other class he comes up with in the future. An excellent way to practice being a pastry chef in his commercial kitchen using all of his tools of the trade. I can't wait for the next class!

Joel was a fantastic teacher. He took the time to get to know all of the attendees, he explained the steps and demonstrated, then gave us the space to give it a go ourselves. Joel was very happy to help out where needed as well. He was super friendly, we enjoyed a freshly baked focaccia pizza for lunch and went home with all of our own baked pastries.
One comment I will make is that the space was very tight and all participants were very close for the entire course.

The venue was cosy but perfect for our group size. The location was convenient with parking available right across the road.

I really felt this class held a lot of value for what you took home both physically, skill-wise and knowledge-wise. I don't expect my next batch of croissants to come out as perfect as they did on the day but it was a great starting point. We had people in our class who had prior experience who also seemed to take away a lot of knowlegde.

I really appreciate the time and effort both Joel and Anthony brought to the class. So far my favourite class bento experience!

Joel was an awesome teacher. He was very good at explaining what we were doing plus was happy to take and answer all our questions. I felt like I learnt alot and it was completely hands on. Anthony who works with Joel also helped us at times if we had any issues with rolling dough etc, and he also cooked us lovely treats we could munch during times when we were waiting for the dough to rest. My daughter and I attended the class. The teacher, Joel is a very experienced Baker and Teacher he was so good at explaining the process of baking croissants we are so confidant now that we would be able to make croissants ourselves at home and we are not Bakers at all!

Joel was really fun and helpful throughout the class. Though the class finished a bit longer than expected, it doesn’t feel that time passed that much! The class is also worth the money as we get to try various types of puff pastries, croissants and danish pastries that Joel made. In the end, we ended up bringing all of our own freshly made croissants back home (3boxes of them!). PLUSS we also got to bring an extra dough to work on at home which can make around 20 more croissants I shared my croissants to my friends and flatmates and they loved it! The class was extremely tiring but very rewarding and we got great value from the class. We spent 6 hours making croissants and Danish pastries. I ended with 5x boxes of pastries to take home with me. The class size is small and intermittent and you’re working in a small tight space in a commercial bakery. Joel was an excellent teacher and helped everyone along the way especially as kneading, folding and turning the dough required some effort. Joel was very knowledgeable and explain the many reasons why a particular ingredient or technique is used. He openly shares his recipes when asked as his bakery makes everything they put into the pastries, from the pastry creams to all the various fillings and glazes. I would recommend this class to anyone wanting to come to learn. Our class even had a 12 year old budding Junior Masterchef in the making. It was overall a very enjoyable Sunday afternoon spent baking delicious French pastries.

This was a great way to refine your pastry skills or learn from scratch. It's a busy course and you're hands on a lot of the time. The structure is great - while your dough is proofing the baker demonstrates other pastry techniques. Don't eat before you arrive as there's cakes and pastries galore to nibble on. The venue is good, a little tight but very workable.

It was also a lot of fun! You learn how to make croissants and danishes - from making the dough through to decoration. Joel even gives you tips of where to buy ingredients at the local grocery store. In the mini-breaks while you're waiting for the dough to rise Joel shows you how to make puff pastry.

Joel was a fantastic teacher. Super friendly, super helpful and extremely knowledgeable. It great to learn new baking techniques in a fun and friendly environment. His years of experience both as a baker and teacher shone through, he articulately explained each step and assisted us to ensure we left with a pile of our own baked goods we would happily eat ourselves as well as the ones he demonstrated making. What seems like a long class upon booking, makes complete sense when you are actually in process of baking and passes really quickly as you get involved and enjoy the class. Highly recommend this class for learning new techniques, understanding the basics of croissant and Danish pastry baking and for a fun afternoon with a knowledgeable and amiable teacher.

Had an amazing time learning how to make croissant and danish pastries from scratch with Joel! Joel is very patient and knowledgeable, he ensured the class was fun and you’ll learn a lot about baking in general, not only croissants.

Highly recommended for those who love the smell of warm butter and fresh delicious pastries straight out of the oven!

This was a great workshop! Joël is a patient and engaging teacher. It was good fun to learn how to make (chocolate and plain) croissants and danish pastries from scratch. It also really gave a feeling of pride to see the finished products coming out of the oven, and to eat them (and share them with friends and colleagues). They tasted so good, and we couldn't believe we actually made them! The only minor points of critique would be that the workshop was a bit long and therefore quite exhausting (it lasted a good 6/6,5 hours). Also, it would have been nice and less time consuming if everyone in the group had their own equipment, instead of, for example, having to share rulers and having to wait on each other to finish. That took up quite a bit of (unnecessary) time. Other than that, everything was great and we would definitely recommend this workshop!

Our baking class with Joel at Les Marais was an exceptional experience
It was very well organized and flowed beautifully all 6 hours of it!
I must say time flew by as we were totally engaged in the whole process of making croissant dough from the beginning till the delicious end

The atmosphere was just great a small group of eight very nice people
