In this deliciously interactive class, join Chef Alexandre Charasse as he shows your the enticing art of French pastry. Born in France and classically trained in French cuisine, Chef Alexandre is the perfect guide to teaching you how to consistently make the perfect macaron. One of the most iconic confections in France, Macarons are delicate biscuits made with almond flour and sandwiched together with a luscious filling.

Chef Alexandre will take you through a detailed demonstration and then guide you through the step by step process of Macaronage, piping, baking and assembling fifteen Macarons. He will then demonstrate how to make two popular Macaron fillings; a traditional buttercream and an indulgent ganache.

By the end of this class, you will proudly be one step closer to becoming the confident baker and pastry cook you've always dreamed of! Discovered invaluable easy recipes and techniques, and learn how to create magnificent macarons from a qualified expert!

To create the best experience possible, we are taking extra precautions to ensure the safety of our guests, chefs, and venue partners. Here’s what you can expect from a future in-person Drool experience.
- Our Culinary Instructors to wear gloves and masks at all relevant times.
- Social distancing guidelines in place as groups will be seated an appropriate distance apart from each other.
- Guests are expected to wear masks whenever not seated at their table.
- Guests will be provided the option to wear gloves.
- Hands must be washed upon entering the venue, and hand sanitiser will be available.
- Any cooking equipment used during the experience is properly sanitised by our partner venue and our Culinary Instructor, as is always the case.
- All guests that participate in the experience together will have their own set of equipment and ingredients that will not be shared with other groups.
- Guests will be divided into work stations of 2-4 people.
- The space in which your experience shall be held is always sanitised before and after class, however our Culinary Instructors shall be taking extra precautions to ensure the space is safe to use.
- All guests, partner venue staff and our Culinary Instructors must attest that they don’t have coronavirus symptoms before being exposed to the experience.

Alexandre is French born Pâtissier and Chocolatier. Chef Alexandre's impressive culinary career has seen him working in three Michelin star institutions, luxury hotels, cruise liners and private yachts all over the world. In 2009 Chef Alexandre ventured to Melbourne and debuted as a Pastry Chef at renowned three hat restaurant Vue De Monde. He then went on to master High Tea at the Hotel Windsor, and has graced iconic Melbourne institutions including the National Gallery of Victoria, the Regent Theatre, Chez Dre Cafe and Bibelot South Melbourne. Chef Alexandre now shares his culinary knowledge and passion with the next generation of chefs at Melbourne Polytechnic and has recently opened a French Pâtisserie in the heart of Richmond.

The macaron masterclass was so good! Alex was a great teacher and it was really helpful to see Alex demonstrate first and be able to hear his tips. We made the most amazing macarons and I’m inspired to try some more at home. Penny was a lovely host too and she definitely helped us all to feel comfortable and welcome.
