Over three weeks, you will discover the food from the birthplace of pasta, Italy.

Course outline:

Week One: Pasta 101
In this step-by-step class, you will learn to make two kinds of egg pasta typical to the Emilia-Romagna region, 'Paglia e fieno" tagliatelle, and garganelli. To accompany your pasta, your teacher will show you how to cook a proper ragu' (know as Bolognese sauce).

Week Two: Tortellini & Tortelloni:
In week two, you will learn how to master stuffed pasta, and we will be making different shapes of ravioli: tortelloni, agnolotti, cappelletti, etc.
The filling of the ravioli is as important as the pasta. Under Marina's guide we will make two different fillings and then we will cook our ravioli in broth and butter sauce.

Week Three: Cavatelli, & Busiate:
In the third week we will explore the Southern part of Italy. Pasta Master Marina Totta will take you on a journey of the Mediterranean!
You will be guided through the step by step process of making various pasta shapes from South Italy by hand from scratch.

You'll learn how to roll and create Cavatelli, Orecchiette and Busiate too! You'll also get to make a delicious pistachio pesto and a seasonal sauce to accompany our shapes.

At the end of each class, you'll get to sit back, relax and enjoy the food you've prepared with like-minded people in my kitchen.
During the class, the teacher will provide:

  • coffee and tea
  • good Italian wine to match the recipes
  • recipe's booklet
  • snacks and/or dessert

Don't worry - you'll make enough pasta so that you can take it home and share it with your family!
At the end of the pasta course you will be gifted two packs of 00 flour and semolina flour from Italy, so that you can recreate the pasta yourself at home.

Marina is so lovely and welcoming. We are invited to her home to prepare the most incredible pasta from tagliatelle to ravioli to tortellini. From spinach and ricotta to roast mushrooms and ricotta to pork beef mortadella prosciutto Parmesan fillings. The pasta is then cooked in simple but delicious sauces, think brown butter and sage, cream and Parmesan, pork and peas. Afterwards, we sit together for lunch and feast on our hard work. Fabulous way to spend the weekend. In addition, I had to reschedule last minute one time and Marina couldn’t have been more understanding. Thank you!
