Hi, my name is Laura Ballester Andani, and I was born in Xátiva (Valencia), Spain. I learned how to cook by spending time with my grandma and my mum. After finishing my culinary studies, I worked in a variety of Michelin-star restaurants across Spain, Italy, and Belgium, until I landed in Sydney 13 years ago. I worked as a pastry chef at Ormeggio restaurant for 4 years, where I began to fall in love with the process of bread-making. It was then that I decided to change my career and become a baker. A few years later, I started my small takeaway food business, EAT WITH LAU, offering Spanish home-cooked food to friends and colleagues. In February 2023, I moved to Melbourne and continued my takeaway business while also working as a baker. Tough life! Now, I’m in Perth and starting a new project: cooking classes that are easy and relaxed. I would like to invite everyone to enjoy a Spanish cooking experience in my own home. After years of working in professional kitchens, I’m ready to teach the fun and simple way to cook my favourite cuisine—Spanish food. My aim is not only to show you how to cook dishes from my country, but also to share the culinary heritage and culture behind our cuisine.
