Join our Big 4 Pastry Course and learn a variety of new pastry making skills. Over the course of four weeks, you'll master the art of macarons, puff pastry, choux pastry, and tarts.

Week 1: Macaron Magic

Week 2: Puff Pastry Perfection
Unlock the secrets to creating flaky, buttery layers in both sweet and savoury creations. From turnovers to palmiers, you'll develop the skills to achieve puff pastry perfection and impress with your baking prowess.

Week 3: Choux Pastry Delights
Delve into the realm of light and airy choux pastry. Gain expertise in piping and baking delicate puffs, and explore a variety of fillings, toppings, and glazes. With your newfound skills, you'll create irresistible éclairs, profiteroles, and more.

Week 4: Tart Temptations
Master the art of crafting impeccable tart crusts and discover the artistry of filling and decorating. From fruit tarts bursting with seasonal flavours to decadent chocolate ganache tarts, you'll learn to balance flavours and textures, creating visually stunning and delectable desserts.

I am originally from France and have been a pastry chef for 25 years. For the past 14 years I have been living in Sydney.
From 2010 to 2015 I was a teacher at the renowned culinary school “Le Cordon Bleu” in Ryde, and taught patisserie demonstrations and private classes. In 2012 I started my own business, Patisserie le Marais in Bondi and have since moved it to Maroubra. My favourite things to teach are croissants, Danish pastries and puff pastry products. I really love these products because you can do so so much with them.
