The Colourful History of Jewellery Making
By ClassBento Team
I'd never tried jewellery classes in Sydney before. When I was a kid, my mother took me to meet one of her friends for an afternoon lunch. WeI'd never tried jewellery classes in Sydney before. When I was a kid, my mother took me to meet one of her friends for an afternoon lunch. We had to pick her up at her house, she explained, because Betty was blind and couldn’t drive herself. Having never met a blind person before, a flood of wonder and curiosity washed over my young mind: What would she be like? Would she be sad? What did she do if she couldn’t watch television? When we pulled up the gravel driveway, Betty was already at the doorway, ready to greet us. She was smiling and waving, and with her dark sunglasses, you wouldn’t even suspect that she wasn’t look straight at us. After introductions, Betty invited us inside for some iced tea before we went to the restaurant. As she turned to lead us into the house, I was mesmerized by her beautiful cascade of silver hair, pinned back with the most intricately beaded hair clip I had ever seen. The clip was an oval about five centimeters long and a few centimeters high and was adorned with blue, red and yellow beads arranged in symmetrical patters. It reminded me of the mosaics we had learned about in school, yet somehow more impressive because of the minuscule size of the beads (I later learned that they were called seed beads.) They were so small; you could almost mistake the entire thing for patterned fabric. My mother smiled. “She makes those herself, you know,” she said. Though she couldn’t see my expression, Betty sensed my surprise and laughed. “It’s true,” she said. “Come on, I’ll show you my collection.” Betty lead me to a spare room, where she had set up a workshop. On top of her desk, she had everything to make the intricate clips: rows and rows of brightly colored beads, spools of thread, various sizes of scissors and pliers, and strips of leather. Pinned up to the wall in neat columns were her finished products. Reds, blacks, oranges, greens, and blues. They were impossibly beautiful. Watching Betty show off her art made me realize how important beadwork was in her life. Just standing in her workshop, she was relaxed and full of joy. For the rest of the day, I couldn’t stop thinking about Betty making those incredible hair clips. I had always enjoyed making crafts with beads at school, but I couldn’t imagine creating something so detailed. My mother explained to me that the beadwork was an integral part of Betty’s heritage as a Native American of the Owen’s Valley Paiute Nation in the United States, and she had probably learned very young. Not a lot of people have an interest in learning the craft anymore, she told me sadly. Intrigued, I started researching the history of jewellery and beadwork on my own, finding a cultural history as elaborate as Betty’s art. History of Jewellery Making Jewellery, which in its most primitive form constituted decorative shells, bones, and colored rocks, is thought to be older even than clothing. As humans began settling into communal agrarian societies, in Mesopotamia and Ancient Egypt, jewellery developed into more ornate and sophisticated forms of art, alongside concepts like religion and governance. At this moment in history, jewellery began gathering social significance. For example, the tomb of the pharaoh Tutankhamen, whose treasures are housed at the Egyptian Museum (2) in Cairo, is still the largest collection of jewellery in the world, and gives modern historians a good idea of the opulence afforded only to the most powerful royal figures of the time. The next few centuries saw an explosion of jewellery trading that solidified the art as a staple of almost every European, North African, and Middle Eastern civilization. A historian can dedicate a lifetime to a single island in the Mediterranean, like Crete, and never learn everything there is to know about jewellery in the Ancient World. The waters are simply too deep. At the same time, on two completely separated continents, jewellery was weaving another historical thread in North and South American settled societies. In Central and Southern civilizations, like the Aztecs and Mayans, silver and gold were popular materials for ornamental pieces. For Western tribes, like Betty’s, early forms of jewellery consisted of natural materials, such as shells, silver, ivory, colorful stones like turquoise, etc. European colonists, surprised no doubt to see such beautiful jewellery in the New World, introduced glass and seed beads in the 16th century, revolutionizing Native American art. Today, Native American nations throughout the United States continue to produce beaded moccasins, hair pieces, and baskets to preserve the tradition. With such a diverse and vast history of jewellery in human civilization, it is no surprise that jewellery continues to be a key part of almost every society in the world. But in this age of mass-production, is there a way to preserve the age-old tradition of jewellery making? Is it even worth it to try? Scientists say we have a very strong incentive to keep jewellery making around, namely its potential to improve our mental health. One study (3), lead by Carolyn Adams-Price and Bernard Steinman of Mississippi State University, reviewed the impact of jewellery making on the mental wellbeing of 29 Canadian and American women, aged 31- to 64-years-old. All participants reported a psychological benefit, while 24% said that they experienced an increase in happiness and self-worth in particular. The organization, Bonita Bead Boutique (4) in the United States, has recorded similar effects, from reduction in stress-related illness to improved cognitive function, in individuals participating in jewellery making for the first time. Getting involved in jewellery making is incredibly easy. Jewellery making workshops are taught all over Sydney. Check out the long list of beginner’s classes by Chris Smalley: 1) Earring making 2) Beaded jewellery making and 3) Jewellery repair and upcycle Because of the broad definition of jewellery, there are endless options for beginner’s classes, based on your personal preferences. Try Not to Smile in an UKulele Class
By ClassBento Team
It’s difficult to imagine a happier instrument than the ukulele. Light, twinkling musicality aside, the mere appearance of the small stringed-instrument,It’s difficult to imagine a happier instrument than the ukulele. Light, twinkling musicality aside, the mere appearance of the small stringed-instrument, miniature and cute, invokes a feeling of joy. Just do a quick search for ukulele covers of your favorite songs, or attend music classes in Sydney and try not to smile. The ukulele conjures up images of the shores of Hawaii, where island breezes carry the scent of floral hibiscus and the crashing of waves can always be heard somewhere in the distance. When considering its origin, one might imagine an islander suddenly stumbling upon the instrument leaning against a palm tree, forever changing the musical world. But the history (1) of the ukulele has a much more intriguing past, stemming from Portuguese immigration to the set of islands in the mid 1800’s. As early as 1879, shiploads of immigrants from the islands of Madeira and the Azores arrived in Hawaii as farmhands to work in sugar cane fields. Of the many items they brought with them, the machete de braga, a four stringed instrument, was arguably the most entertaining. At the end of a long day in the fields, families would sit around campfires singing traditional folksongs before resting up for the next grueling day of work. The music was probably first heard by the indigenous population when the Portuguese community gathered at the docks of Honolulu to welcome new immigrants to island. The popularity of the stringed instrument spiked, soon becoming the star of street-corner concerts that the newcomers and established population could enjoy together. Fascinated by the energetic strumming of the machete players, island natives renamed the instrument ukulele, Hawaiian for jumping flea. Even local royalty adopted the new toy. King David Kalakaua, an accomplished musician, brought the ukulele to a wider audience by naming it Hawaii’s national instrument. Subsequently, some minor changes were made to the ukulele, utilizing koa wood and altering the tuning to make the instrument more portable and enjoyable to play. The next century saw rises and falls in ukulele popularity akin to the very sea from which the instrument originated. There are many detailed histories (2) on the subject, starring iconic American legends like Elvis Presley and Bing Crosby. Today, the uke is experiencing yet another revival, with vloggers posting covers of the latest popular songs, and well-known bands playing their own songs with the happy little instrument. Which is good news for those who have been voicing the benefits of learning the ukulele for years. That’s right. The ukulele is entertaining and good for you. Here’s why. Neuropsychologist Daniel Levitin, a professor of music at McGill University in Montreal, provides some uplifting news on the efficacy of music intervention and clinical music therapy. According to him, scientific studies have found that particular types of music, be they upbeat or downtrodden, influence hormones in the brain, creating increases or dips in blood pressure. The key is, he says, for the individual to find music that most influences him. A doctor cannot prescribe classical music and assume that it will affect every patient the same way. Music is subjective, in other words. The interesting thing about the development of music intervention in today’s society, says Levitin, is that people are already using music as treatment method without really thinking of it as medicine. Companies like Spotify and Apple Music, for instance, have capitalized on this practice by arranging playlists based on moods, location, and activities. It seems that we as a society have already figured out what psychiatrists are testing, namely that music influences our emotions. The field of psychology is taking it one step further by asking whether music therapy can be used to treat more serious cases of psychiatric disorders. Harvard Review of Psychiatry (3), for example, published a study in 2011 exploring the effects of music on patients with various mental illnesses, including depression, schizophrenia, and anxiety, among others. They found that in some cases, music could actually be used as an alternative to traditional treatment regiments. Of course, the results need to be tested further, but this is incredibly exciting step for those looking for alternatives to invasive types of therapy, like medication or electroconclusive therapy (ECT). Overall, listening to music is a great way to boost mental health and help deal with certain psychiatric illnesses. So if the ukulele is the instrument that gets you smiling, you can make a conscious choice to improve your wellbeing by incorporating ukulele tracks into your daily routine. But wait, there’s more! Research shows that while listening to music has a great influence on wellbeing, playing music has an even stronger impact on mental health. Some benefits, according to Levitin, are cognitive improvements as a result of attentional training. He goes on to point out that children who are exposed to music classes are more likely to be well-socialized later in life. In support of Levitin’s claim, a study (4) out of Canada suggests that children’s participation in music lessons leads to an increase in social cohesion as a result of sympathy and prosocial development. There are various theories as to why learning to play music may contribute to changes in these behaviors. One idea is that the ability of music to bring humans together may have played a role in the survival of our ancestors. In related studies, music lessons have been associated with cognitive functioning improvements in language skills, visuospatial abilities and memory. Such findings even linked music classes to higher intelligence and academic success. Clearly, listening to and playing music is beneficial to our mental health as well as our social interconnectedness. And what better way achieve both than to add a little ukulele to your life? Those who have tried out ukulele classes rave about the joy of learning to play the instrument. Luckily, because of a recent increase in ukulele workshops and classes in and around Sydney, it is a great time to take up the hobby. For a traditional class, try signing up for the ukulele class in Bondi Beach with Dan Allen. References: (1) museumofmakingmusic.org (2) theatlantic.com (3) tandfonline.com (4) journals.plos.org ...

Top 5 Baking Classes for the Weekend
By John Tabari
Many pastries may have originated, or gained fame in France, but they’re enjoyed around the world. There are many reasons to take a pastryMany pastries may have originated, or gained fame in France, but they’re enjoyed around the world. There are many reasons to take a pastry class; to enjoy your favourite treats at home, to entertain friends or simply hone your baking skills. Check out these five classes that will teach you how to make your favourite patisseries. 1. Macaron Making You may think that you wouldn’t need to attend a class to make macarons, but they are notoriously difficult to get right. At a macaron class, you will learn the ‘macaronage’ technique. This involves folding the mixture that will make your macaron biscuits. Most bakers agree that getting the correct consistency at this stage will determine whether your macarons turn out well. A good macaron class should put emphasis on this step. You will also learn the piping technique, which is used to produce the biscuit shape and administer the filling. Some macaron classes stick to the French method and advertise as ‘French’ or ‘Parisian’ macarons. Other classes get a little more experimental and you may use different ingredients or make different shapes. In any case, you will get to take your creations home in the form of a box of delicious treats. 2. Croissants As with the macaron, it may not seem difficult to make croissants but you should take a class if you want to make the best croissants. Freshly made pastries beat packaged ones any day, so add them to your repertoire with this course. You’ll learn about the secret ingredient, about yeast and proofing. Once you’ve made the dough, you learn how to roll and fold it to keep the classic crescent moon shape. If the teacher is prepared to get experimental, they may teach you how to make an almond or chocolate-filled croissant. Since proofing takes around 2 hours, you may not get to eat your croissants on the day, but you will be able to take your dough home to cook later. Plus, you're likely to get freshly-prepared croissants during the class, just to give you an idea of what you’re aiming for. These classes are not as common as macaron courses and as such will set you back a little more. 3. Choux Pastries Another classic French staple is the choux pastry. Choux pastry forms the base of many favourite desserts such as eclairs, profiteroles, chouquettes and gougères. The defining characteristic of choux pastry is that it looks like it’s going to be dense, but when you bite into it, it’s light and thin. It takes a special technique to get pastry this way, which involves using steam instead of a raising agent. You’ll learn how to do this at one of these classes. Since choux pastry is easier to make than it seems, some classes will involve trying your hand at both sweet and savoury pastries. A choux pastry class costs similar to a macaron classes and they take less time to make than croissants. 4. Danish Pastries & Pain au Chocolat You will find these desserts offered with croissants as well or as part of a general pastry-baking class. As these sweets are made from puff pastry, they are often covered together. While croissants are also puff pastry based, they use yeast and milk in the dough to create a different effect. In a puff pastry class, you will learn how to make the pastry, how to proof and then cook it. Proofing can be a delicate process and the baker must ensure that the pastry is proofed at the correct temperature. This class will also arm you with the necessary cutting and folding techniques for the dough. Plus, for Danish pastries, you will learn about the different types of filling. Since these classes usually encompass several different type of pastry, the cost is usually a little higher at $200. They’re less likely to be offered as experience classes, so you will be enrolling in a baking school; hence the higher cost. 5. Cinnamon Bun Moving away from France to this North American favourite, you can take a class to learn how to bake the perfect cinnamon bun. You will learn how to make the dough base, the delicious frosting and the sumptuous filling. The class will teach you about the best ingredients and baking method to make cinnamon buns. Not to mention the extra skills you need to produce bakery-standard buns, in the perfect shape. ...

Inside a DIY Terrarium Class
By ClassBento Team
Spoiler alert! If you'd like to discover the magic of terrarium making for yourself, go ahead and book yourself in, and read no further. ButSpoiler alert! If you'd like to discover the magic of terrarium making for yourself, go ahead and book yourself in, and read no further. But if you're curious about what exactly happens in a terrarium workshop, I'll be sharing my personal experience with you in detail. Entree I stepped into the Merchant and Green floristry, where the walls are adorned with flowers and shrubs of all kinds, ranging from classics like roses and tulips, as well as Australian natives, through to more exotic (at least for me) flora like cotton. I also learned that there was a Happy Plant in the corner, as well as a Mother-in-laws-tongue (yes, those are really their names! Interesting names for interesting plants. Scientifically, they are Dracaena sanderiana, and Sanseveria respectively). The space had a relaxing vibe. Perfect for stopping to smell the roses (yes, I did that literally too). A table sat in the centre of the room, on top of which were neatly organised terrarium ingredients, giving me a sneak glimpse into the fun ahead. I was greeted by Chris and Mitch from the Merchant and Green team, as well as the other students. Our hosts offered us beverages, and we got to know everyone through a bit of light conversation. We flipped through a little book that Chris had recently acquired, all about terrariums. It reminded me of a cookbook, with recipes for the various types of terrariums, containing detailed lists of ingredients, preparation steps, as well as inspiring and appetising photos. We put on our aprons, and dove eagerly into our first course. Second course Chris showed us the various glass containers we could build our terrariums in. We opted for large circular 'fishbowl' vases, though also available were triangular prisms (a bit more challenging), as well as smaller spherical containers, which can be hung. For those who have a bit more time to spare in a more advanced class, larger terrarium containers are a great choice for indulgence - they allow for more plants, and are perfect for events which you don't really want to end too early (think hen's parties and other special occasions, or a fun team outing). Chris explained that we'd be building up our terrarium in layers, and the purpose of each layer. We also saw a finished terrarium, 'one prepared earlier', to get a better sense of the end goal. The first layer is foundation of stones, which encourages sufficient drainage for our little ecosystems. We each chose from smooth white pebbles, river stones of assorted colours and shapes, and smaller grey stones - you could build this layer with one or a combination of these, with each stone type providing a different aesthetic. Of course, there's a bit of finesse required - it isn't just about dumping stones haphazardly into a bowl! The layers have to be of the right thickness and elevation, to ensure that the ecosystem you're building is conducive to healthy plant life, and to ensure that you end up with a visually appealing terrarium. Chris and Mitch made it all easy though, with their detailed instructions and demonstrations. They also gave plenty of one on one advice (and hands-on help) where needed, while still giving us plenty of space to play and explore by ourselves. Third course Next up was a layer of special moss. The moss plays a crucial role in the terrarium, holding any water you put in, to ensure that your little plants can drink up just the way they like to. The moss came in stringy brown fibres, and smelled very earthy, and reminded me of a forest's scent. We made a little mattress with this moss, which was soft and springy, in contrast to the hard rocks just beneath. My 'layer cake' was starting to take shape! Responding to questions, Chris gave some advice on how to water our terrariums, and the best position(s) in our living spaces for them to thrive. We also got to learn a bit about the history of terrariums, on how they came about. Chris was a great conversationalist, and kept us engaged throughout. Learn more about making terrariums here. Fourth course Next, we added a layer of soil, spooning it generously into our vases. Then Mitch brought out the stars of the show - a tray of petite succulents. There was a wide variety to choose from - short, tall, spiky, smooth, dark, light. On this day, there were over 30 plants to choose from. They reminded me of petit fours, due to their size, variety, and cuteness. Some reminded me of a blossoming lotus or camellia, with their intricate and petal-like leaves. We had a hard time choosing from that feast of options, there were just too many pretty choices (and the plants change with every workshop, so no two workshops are exactly the same). Chris gave us some helpful advice as to which plants would best suit each of us. For example, some plants are slightly harder to maintain (I avoided those), while some plants pair particularly well with others. We eventually settled on our choices (I picked out a tall 'jellybean' shrub, as well as a unique succulent with pink-tinged leaves), and gently shook the plants free of their little pot homes. We trimmed their roots down, so that they would fit comfortably into the soil layer that we had just laid down. The plants are quite delicate, and in some cases a few leaves fell off, but not to worry - Chris showed us how you can actually grow new plants from these leaves, using just a moist paper towel as their initial incubator. Then came the planting. Just like normal planting, just in miniature form. We dug out tiny spaces for the roots of our plants, snuggled them in, and back-filled with soil to ensure that they would be nice and secure, and be able to pass the 'wobble test'. Dessert They saved the best for last. It was now time to put our finishing touches on our terrariums. The icing on the cake! Chris showed us a few styling options, and gave us a few ideas. Would we make a little Zen garden, with a clean and symmetric appearance? Or a natural landscape, one you might find by a riverside? With perhaps rolling hills and gentle valleys, to give more depth to our landscapes? We had a wide variety of stones to work with, from large 'feature' stones of various colours, sizes and textures, to the smaller stones that we used for layering before, as well as some mosses. I sprinkled a fine gravel-like mix to cover the soil, and accentuated it with a larger white pebble, as well as a few smaller coloured ones, somewhat randomly scattered, for a natural and contemporary look. I got lost in the moment - it was so much fun designing and playing with my miniature garden. This was the part where you could be really creative and try out different ideas. Just like a chef would dab at a plate with a cloth to clean up its appearance before serving, we too dabbed and finessed to finish off. It was incredible to see everyone else's finished terrariums. From the same set of ingredients, we had each created very different looking enclosed gardens (though all of them looked great). The whole experience was a great chance to just take some time for myself, to get away from technology and closer to nature. If my story sparked your appetite, go ahead and attend one of our future terrarium classes. The team at Merchant and Green also provide lovely workshops on making Kokedama (Japanese-inspired moss balls), as well as flower arranging with Australian natives, and with seasonal blooms. The classes are perfect for individuals, as well as couples, and larger groups. Until next time! Iain for the ClassBento team ...

Everything You Need to Know About Macarons
By John Tabari
Learn about the history of macarons at baking classes in Sydney It may surprise you to learn that macarons did not originate in France. WeLearn about the history of macarons at baking classes in Sydney It may surprise you to learn that macarons did not originate in France. We imagine that this quintessentially French patisserie could only be the work of a French pastry chef. But, according to historic records, macarons date back to 8th century AD. With the first recorded instances baked in Venetian monasteries. The macaron came to France with Catherine de Medici, when she married King Henry II in 1533. Her pastry chefs continued to make these meringue-based biscuits for her when she moved over to Paris. According to one controversial Encyclopedia entry, it was two French nuns who invented macarons. The text claims that the dessert gained popularity when two Sisters baked and sold macarons during the French Revolution. They used their venture as a way to fund their housing while they were seeking asylum. Yet, those macarons were not the ganache-filled treat we know today. Those macarons were two meringue cookies atop one another, without any filling. As with the invention of the original macaron, there is a discrepancy about how the modern version was invented as well. Two French chefs claimed to have invented the sweet fillings; Claude Gebert and Pierre Desfontaines of Ladurée. They are both credited with having introduced a third layer to the sweet in the early 20th century. French or Italian Recipe? Although macarons originated in Italy, some 17th century Italian cookbooks include ‘French Macaron’ recipes. In any case, there are two distinct methods to making macarons; the Italian way and the French way. The difference comes from the meringue part of the recipe; specifically when to add sugar. The French recipe calls for egg whites to be whisked into meringue shapes before powdered sugar is folded in. The Italian method includes adding sugar to raw egg whites to make a paste. Today, the accepted method to bake macarons is closest to the French recipe. Ladurée Although macarons didn’t originate in France, we have a French patisserie to thank for their lasting popularity. Ladurée has been around for over 150 years. It was founded in 1862 by writer, Louis-Ernest Ladurée. The original location burned down during a late 19th Century uprising, so a second popped up. It was at the second location that the founder’s second cousin, Pierre Desfontaines, created the ‘Double decker’ macaron. This refers to two traditional macarons on top of one another bound together by a creamy, usually ganache or buttercream, filling. The steady increase of these stores outside France attests to how popular the macaron has become. Ladurée is now present in almost 20 cities in Europe and many countries across four more continents. International Interpretations Keeping with the tradition of adapting the original recipe, may other cultures now produce their own versions of the dessert. In the States, the composition of macarons remains the same, but the flavours are much more experimental. In France, you will find classics such as pistachio, raspberry and chocolate. In the US you can buy peanut butter and jelly, pumpkin, cheesecake and candy corn. In Southeast Asian countries, recipes substitute traditional ingredients for local variations. Almond flour is substituted for peanut flower in Japan. Taiwanese recipes incorporate red beans and South Korean recipes use green tea leaves or powder. Discover the best types of macarons here. Pop Culture In Japan, where food can be cute, the macaron is a popular print for fashion items, stationery and even bedding. Simple and colourful, they decorate clothing and accessories along with other foods such as fruit and sushi. In their attempts to create a more upscale image, McDonalds’ McCafe branches sell macarons in France and Australia. Interestingly, they are produced by a company owned by the same holding company as Ladurée. Yet, they don’t use the same recipe; McDonalds has a more limited flavour menu than Ladurée, offering six classic flavours. Ladurée, whilst not as experimental as some US macaron producers, does offer a wider range of French favourites. These include speculoos, rose and salted caramel. ...

With this foundation, you will be able to recommend products to customers based on their needs. Tea or Coffee? So now that you have a better idea of the topics and training you would cover in a Tea Brewing class. Should you learn how to perfect your tea brewing expertise or your coffee making prowess? which is better? Neither! Do both or do the one that you love! If you are looking into making a career move, smart money would be investing in a Barista training. There are more of these courses available and likely more jobs which need this knowledge. However, if you’re hoping to become a tea aficionado, whether as a hobby or profession, go for the Tea Brewing course and pour your heart and soul into it! ...

An afternoon of tummy-rubs from enthused relatives, tiny gender neutral socks and disgruntled eternally-single friends beaming from across the roomAn afternoon of tummy-rubs from enthused relatives, tiny gender neutral socks and disgruntled eternally-single friends beaming from across the room in a feigned act of felicitations - all gather in honour of the greatly anticipated newborn. Rowan, who carves as a form of meditation, encourages students to reignite their creative streak with the simple act of wielding tools to cut rubber. The art is a powerful de-stressor, inexpensive and doesn’t require a lot of space. In Rowan’s workshop, you will learn the process of designing, carving and printing, as well as techniques and tips for creating simple blocks, layering stamps and repeating tile stamps. In the workshop, parents-to-be, friends and family can enjoy one another’s company whilst designing and carving a small rubber block to create beautiful stationery with. Cake Decorating Between fiercely jotting down the titles of baby books from enthusiastic relatives and unwrapping of baby bottles, there is time for cake. And whilst the thought of simply sitting back and indulging in rich chocolate cake may sound appealing to the lethargic mother-to-be, a group task which encourages the entire family to get involved, such as cake decorating, may just spice up the afternoon in a way which does not deprive anyone of cake, but merely forces them to appreciate it. Jo, from ‘Wendy Jo Baking’, who is known for her creative cakes and beautiful and elegant design, will see you and the baby shower party licking your fingers, layer and stack double barrel cakes, spread swiss meringue buttercream, experiment with watercolour effects, apply gold leaf, prepare and arrange flower decoration and temper chocolate in her finger-licking workshop. Best Matcha Recipe Ideas to Improve Your Health
By Julia Carr-Catzel
Matcha, which directly translates to ‘powdered tea’ in Japanese, found its roots over one thousand years ago, when Japanese monks wouldMatcha, which directly translates to ‘powdered tea’ in Japanese, found its roots over one thousand years ago, when Japanese monks would consume the beverage, to maintain calm during meditation practice. In modern Japan, matcha, at the center tea ceremonies, continues to reflect Zen culture. It's also an incredibly popular ingredient in Japanese cooking classes in Sydney. Its signature green colour is the result of the slow growth of the leaves under shade, thus obtaining a greater chlorophyll density. Once harvested, the leaves are ground into fine powder, combined with hot water and whisked with a bamboo brush or ‘chasen’ to make tea. Garnering the attention of superfood lovers and others alike, matcha can be found in a slew of sweet and savoury dishes, from muffins to guacamole, the green powder is known to boost mental wellbeing, weight loss and even fight cancer, Alzheimers and dementia. Facts about matcha When consumed daily, matcha supports the immune system, sustaining your body’s antioxidant levels. Its unique class of antioxidants ‘catechins’, specifically ‘epigallocatechin’ (EGC), can ward off agents which damage cell DNA, and thus reduce chance of cancer, and help fend of the signs of ageing. According to a study conducted by Tufts University, its high antioxidant level of 1573 units is far above food such as blueberries (93) and broccoli (31). Matcha promotes longer-term, sustainable energy. The drink lets you skip past coffee jitters, delivering natural caffeine throughout the body over a 6-8-hour period. L-Theanine amino acid found in matcha increases dopamine levels and boosts serotonin, enhances focus, balances your mood and reduces stress. Alongside detoxifying and rebooting internal processes, matcha improves your outer appearance. One spoon of Matcha tea powder is equal to 10 cups of green tea per day, vastly lowering cholesterol and blood pressure and boosting weightloss. The powder inhibits cell degeneration responsible for wrinkles, skin cancer, loss of collagen and skin elasticity. Matcha meals to try Topping countless meal variations, matcha lattes are likely the most common and popular form. In a fresh, yet complex process, lattes comprise of matcha powder, milk and sometimes a sweetener. Added to smoothies, ice-creams and pancakes – its natural bright green aesthetic is favoured among chefs and health-enthusiasts alike. The green hues are refined on social media where one can scroll through hundreds of photos featuring innovative matcha recipes under the hashtag #matcha; crepes, fudge and green granola included. Japanese foods including rice, green-tea ice-cream or mochi also incorporate matcha. To harness the best quality of matcha, the degree of grade, from cooking to ceremonial must be taken into consideration. Ceremonial graded matcha is usually representative of the region it came from, the amount of time the tea spent in shade before harvest, among other factors. Alternatively, cooking grade matcha is commonly used to produce sweeter cafe drinks. Indicators of ceremonial grade are colour: fluorescent as opposed to moss green and flavouring: slightly bitter with a refreshing grassy taste. When not prepared with care, matcha can lose its nutritional properties. And to maximise and neutralise matcha’s antioxidants, various ingredient pairings help to increase its properties such as citrus from lemon, promoting absorption. Vitamin C perfectly compliments matcha’s grassy notes. Typical Japanese desserts such as yoghurt: to balancing out bitter flavours or chewy, sweet mochi: to add a layer of texture to compliment matcha. Discover more traditional Japanese cooking classes here. Learn to use matcha Learn how to harness matcha’s best qualities under the expertise of a professional chef. Intimate Learning and Teaching - the Power of Privacy
By Classbento CTO
ClassBento's privacy options allow teachers to use secret venues, and gives students marvellous new ways to experience classes. So what'sClassBento's privacy options allow teachers to use secret venues, and gives students marvellous new ways to experience classes. So what's this all about, how would it be helpful, and how did we apply lessons from psychology research? Let's run through these options one by one and see. We allow teachers to mask their teaching venue. In this case, a circle is shown on a map, with the venue’s real location hidden somewhere within the circle. The exact location is only revealed to paying students. This allows teachers to use private venues like their home or private studios for classes, while allowing prospective students to know their rough location without compromising their privacy. These venues tend to be more convenient and cheaper for teachers, since they tend to be owned and used by teachers for other purposes. I’m personally uncomfortable with revealing my home address to strangers (strangers who pay me to be my students are the exception), so I use this option myself (1). There are of course other reasons why teachers may choose this option. For example, photography teachers may want to take students to their secret spots with the best angles, lighting and subject matter, and don’t want to reveal these to the general public. We offer private classes to students for intimate learning. Specifically, students can book some classes privately (where enabled by the teacher), which will immediately make the class unavailable for future bookings by members of the public. Students can book private classes either just for themselves, or also on behalf of others. Teachers can offer their own venues and/or to travel to students. We can imagine some ways that this would benefit students (there are probably more): You want to take a date out to something a bit more interesting than dinner and a movie, and want an intimate experience (you may know the song ‘Tennessee Waltz’; it’s both a great song and a cautionary tale (2)) You don’t want outsiders intruding on your company team or family bonding time You are an introvert and don’t cope well in bigger groups (between a third to a half of us are introverts (3), including me) You are don’t want to be judged for your currently amateurish skills (like me with dancing, singing, painting, skateboarding, Spanish … okay basically everything). After all, if you think that you're being judged negatively, you'll often perform worse, compared to if you were by yourself or with just trusted others (like a patient teacher) (this has been proven by scientific experiments) (4) You want to express your creativity fully, especially in open-ended subjects like the visual arts; you want to minimise the 'peer pressure' to produce conformist output (5) You don't want random other people who aren't quite as advanced as you slowing down your learning Of course, we offer 'public' options as well. Teachers can specify where their venues are to the public if they wish, and students can join public classes and meet new people if they wish (and if the teacher's class allows). Each option has its own advantages. We hope you love our privacy options! (1) Yes, I’m actually also a teacher on ClassBento. As to which one … that’s a secret for now (2) Listen to Patti Page’s lovely rendition at: youtube.com/watch?v=_Ek3eCbfqp0 (3) From "Quiet: The Power of Introverts in a World That Can’t Stop Talking" by Susan Cain. A great read, highly recommended (4) The technical term from this is 'Evaluation apprehension'. It's a well researched theory in psychology. It's remarkably pervasive; a famous study showed that women perform worse in maths tests when their gender was implicitly brought to their attention, due to the women recalling the stereotype that they should be worse at maths than men (in this specific case, it's referred to as 'Stereotype threat', but now I'm going quite a bit off topic) - see Inzlicht, M.; Ben-Zeev, T. (2000). "A Threatening Intellectual Environment: Why Females Are Susceptible to Experiencing Problem-Solving Deficits in the Presence of Males" (5) This is related to the concept of 'Social desirability bias', which again is well established in psychology. Interestingly, studies suggest that this effect explains why men tend to artifically inflate the number of sexual partners they've had in self-reports, while women under-report theirs, to conform with the participants' view of what is socially acceptable. See Smith, T. W. (1992). "Discrepancies between men and women in reporting number of sexual partners: A summary from four countries", and Tourangeau, R.; Yan, T. (2007). "Sensitive Questions in Surveys" ...

10 Ways to Unwind with the ClassBento Crew
By Courtenay Turner
Despite what the $1.5 trillion global wellness industry would have you believe, taking care of your physical, social and emotional wellbeing doesn’tDespite what the $1.5 trillion global wellness industry would have you believe, taking care of your physical, social and emotional wellbeing doesn’t require fancy French candles, powdered mushroom supplements or cryotherapy – unless you want it to. That's right, self-care doesn’t need to be shoppable, Instagrammable or endorsed by the beauty editor of the weekend paper – and we're here to prove it! To celebrate the many wonderful ways we can look after our health and wellbeing, we called on the ClassBento crew to share their favourite ways to relax and unwind. From nostalgic 90s re-runs and rock climbing to private dance parties, it’s safe to say there really is no “right” way to practice self-care… 1. Cook slowly, eat mindfully “My favourite way to unwind is by cooking. Making pasta from scratch, experimenting with stir-frys and curries and making apple pies are just some of the recipes I've been trying out. The most important aspect of cooking is to have a good few hours on hand and to simply enjoy the process. The key is good tunes, patience and plenty of taste-testing throughout.” – Kellie, Content Writer “Nothing beats sitting on the beach with a good book and some healthy dinner while watching the sunset!” – Adelaide, Social Media Manager 2. Travel back in time “Sometimes, I just like to watch re-runs of nostalgic shows I grew up with or look at old photos and videos. I like to take a trip down memory lane by looking at old keepsakes like drawings I did as a kid, magazines I used to read or toys I loved.” – Veronica, Designer 3. Wash the day away “On these hot summer afternoons, I jump into the ocean at the end of each day which has been sublime.” – Natasha, Community Partnerships Manager 4. Dance, cos this time, there’s really no one watching “My favourite way to unwind or get myself into a better mood instantly is to have a mini dance party by myself. No one’s there but me, and I just dance with (and for) myself. I groove depending on what my mood is… sometimes, you’ll find me jumping around with my hair out twirling and singing, sometimes I have a little slow dance with myself and give myself an embrace, other times I'll be discovering a completely new move.” – Rez, Customer Service Hero 5. Spend time with yourself “I love taking a bath and doing a ridiculously long skincare routine.” – Phoebe, Content Writer “I find taking long baths particularly relaxing because I'm forced to not use any electronic devices for a while. And I know I won't be picking any phone calls or getting any other distractions in there! There's also no pressure to do anything and it's a nice sensory experience to be surrounded by warm water!” – Iain, Co-Founder & CEO 6. Relax into your favourite reads “I like to read The Happy Newspaper. It's full of really cute, funny, happy and heartwarming stories and is a nice break from the mainstream news which can be overwhelming at times.” – Laura, Head of Editorial “More often than not it’s reading a book. Hard copy books make it all the better but a Kindle Unlimited book is my guilty pleasure. If I’m not reading a book at the time (which is rare) I’m usually watching a French TV show to keep up my language skills or scouring the internet for new true crime podcasts.” – Charlotte, Content Writer 7. Do a little DIY “I knit and listen to podcasts, I'm one of those people who likes to keep my hands busy, even when I need downtime. If I could find a way to read a book while knitting and not messing up my project, that would be amazing!” – Jane, Content Writer 8. Skip the gym for the great outdoors “I like active relaxation, like going on a trek in the nearby mountains or getting up and confronting my fear of the ocean by paddleboarding or kayaking out in the sea. I also encourage my kids to do active relaxation activities after school, rather than extracurricular classes that they really don’t like. They go out rollerblading, swimming or rock climbing (the best activity out there!).” – Luis, UK Country Manager 9. Get crafty with the kids “Going for a walk, taking my kids to the park, doing a jigsaw or colouring-in books with the kids.” – Ryan, Community Partnerships Manager 10. Tend to your plant pals “Before 2020, my downtime didn’t expand much beyond binge-watching reality TV shows like Love Island and scrolling on Instagram for hours. Fast forward two years and I’m now a proud plant parent with over 30 green friends. I even have an app called PictureThis to keep up with my ever-growing garden, which helps me make sure I’m meeting all their watering, fertilising and sun needs. Between Henry the aloe vera, Olive the olive tree and Hazel the sansevieria, my hands are well and truly full. Nothing feels more rewarding and relaxing than tending to my beloved plants and watching them grow and thrive!” – Laine, Editorial Manager Regardless of whether you're an avid reader, a weekend hiker or a nightly bubble-bath-taker, it pays to remember that self-care is not synonymous with self-improvement. In fact, it can be totally private, unapologetically personal and utterly un-Instagrammable. So go on, treat yourself to some true "me-time" and fill your cup! ...
