Top 5 Baking Classes for the Weekend
By John Tabari
Many pastries may have originated, or gained fame in France, but they’re enjoyed around the world. There are many reasons to take a pastryMany pastries may have originated, or gained fame in France, but they’re enjoyed around the world. There are many reasons to take a pastry class; to enjoy your favourite treats at home, to entertain friends or simply hone your baking skills. Check out these five classes that will teach you how to make your favourite patisseries. 1. Macaron Making You may think that you wouldn’t need to attend a class to make macarons, but they are notoriously difficult to get right. At a macaron class, you will learn the ‘macaronage’ technique. This involves folding the mixture that will make your macaron biscuits. Most bakers agree that getting the correct consistency at this stage will determine whether your macarons turn out well. A good macaron class should put emphasis on this step. You will also learn the piping technique, which is used to produce the biscuit shape and administer the filling. Some macaron classes stick to the French method and advertise as ‘French’ or ‘Parisian’ macarons. Other classes get a little more experimental and you may use different ingredients or make different shapes. In any case, you will get to take your creations home in the form of a box of delicious treats. 2. Croissants As with the macaron, it may not seem difficult to make croissants but you should take a class if you want to make the best croissants. Freshly made pastries beat packaged ones any day, so add them to your repertoire with this course. You’ll learn about the secret ingredient, about yeast and proofing. Once you’ve made the dough, you learn how to roll and fold it to keep the classic crescent moon shape. If the teacher is prepared to get experimental, they may teach you how to make an almond or chocolate-filled croissant. Since proofing takes around 2 hours, you may not get to eat your croissants on the day, but you will be able to take your dough home to cook later. Plus, you're likely to get freshly-prepared croissants during the class, just to give you an idea of what you’re aiming for. These classes are not as common as macaron courses and as such will set you back a little more. 3. Choux Pastries Another classic French staple is the choux pastry. Choux pastry forms the base of many favourite desserts such as eclairs, profiteroles, chouquettes and gougères. The defining characteristic of choux pastry is that it looks like it’s going to be dense, but when you bite into it, it’s light and thin. It takes a special technique to get pastry this way, which involves using steam instead of a raising agent. You’ll learn how to do this at one of these classes. Since choux pastry is easier to make than it seems, some classes will involve trying your hand at both sweet and savoury pastries. A choux pastry class costs similar to a macaron classes and they take less time to make than croissants. 4. Danish Pastries & Pain au Chocolat You will find these desserts offered with croissants as well or as part of a general pastry-baking class. As these sweets are made from puff pastry, they are often covered together. While croissants are also puff pastry based, they use yeast and milk in the dough to create a different effect. In a puff pastry class, you will learn how to make the pastry, how to proof and then cook it. Proofing can be a delicate process and the baker must ensure that the pastry is proofed at the correct temperature. This class will also arm you with the necessary cutting and folding techniques for the dough. Plus, for Danish pastries, you will learn about the different types of filling. Since these classes usually encompass several different type of pastry, the cost is usually a little higher at $200. They’re less likely to be offered as experience classes, so you will be enrolling in a baking school; hence the higher cost. 5. Cinnamon Bun Moving away from France to this North American favourite, you can take a class to learn how to bake the perfect cinnamon bun. You will learn how to make the dough base, the delicious frosting and the sumptuous filling. The class will teach you about the best ingredients and baking method to make cinnamon buns. Not to mention the extra skills you need to produce bakery-standard buns, in the perfect shape. ...

How 8 Global Makers Are Using Workshops to Change the World

What do you think when you hear the names Malala Yousafzai, Michelle Obama and Gloria Steinem? Strong, trailblazing icons. These women are householdWhat do you think when you hear the names Malala Yousafzai, Michelle Obama and Gloria Steinem? Strong, trailblazing icons. These women are household names for a reason, but in the words of author Kate Hodges, “Behind every great woman… is another great woman”. While their names might not be as widely known, ClassBento’s global community is overflowing with innovative women working to promote equality by sharing knowledge and creativity. Some have picked up their crafts from mothers and grandmothers, while others have determinedly taught themselves, or been mentored by fellow makers. The special thing about them, however, is their shared mission, one that allows you to tap into your creativity and experience the wellbeing benefits that come with it. So here are 8 voices from our uplifting community of women-identifying makers. Authentic, inspirational and crafting change—one stitch at a time. Makers turning the tables on gender stereotypes Monique and Reneé Hunte, East London England Sisters and co-founders of Dai-KOR “For us, we’re breaking gender stereotypes by showing everyone that women are out here winning in business. We share our story during workshops in the hope to inspire and motivate others to follow their passion and dreams.” Janine Hendry, Melbourne Australia Founder of Guild of Objects and the March4Justice Movement “For the first time in a decade, the gender pay gap is getting worse and not better. Workshops at Guild of Objects are all about empowering women to take control of their own income.” Nadia Abbas, London England Founder of House of Stööki “Women can do the heavy side of jewellery making too. The jewellery making practice has a lot of different methods of making and some are more brutal than others. Our workshops show students that the finished Stööki products have been made using all the different methods of production.” Kelly Ortega, San Francisco United States Founder of Artillery AG: Mindful Ceramics “So often to win success in business looks like being co-opted into the systems of oppression all around us. As a woman of colour, who is also a business owner, I hope to disrupt these harmful practices. At Artillery Ceramics we are slowing down, caring for each other, reconnecting to ancestral Indigenous roots and creating with intention.” Sara Knights, Steyning England Founder of perfumery Sara Lucia “As a perfumer, I set out to challenge the stereotype that women should smell a certain way or ‘like’ certain aromas. Smell is not gender specific, in fact, men can love lavender and geranium and women can love leathery, tar smells.” Makers uniting to empower one another Cara Bevilacqua, St Augustine Florida United States Founder of Coastal Design Workshops “The support creative women give each other is unmatched. I hire and train female artists to learn how to teach others their creative skills and to see how rewarding it is for them is something that makes me feel extremely fulfilled.” Nadia Abbas “The women that I met when I got my jewellery degree at university have become part of a friendship group that has shaped my career today. We all share a love of jewellery design and have continued to thrive in the industry with each of our businesses that encompass very different styles.” Kelly Ortega “Through my workshops, I was lucky enough to meet a woman who I now consider a dear friend and is now the second instructor for my mindful ceramics curriculum!” Amy Beggs-French, Canberra Australia Founder of Deep Blue Ceramics “Years ago I bought a handmade mug at a market. I caught a cold shortly after and ended up having about a million lemon, honey and ginger teas. I fell completely in love with my new mug—it was so nurturing. I enrolled in my first pottery class as soon as I was better. The maker I bought my life-changing mug from was Tina. Connecting with her through appreciation of her art as well as a bunch of other mutually adored hobbies, we are now great friends!” Sampada Gurung, London England Founder of The Slightly Curious Studio “One of the most impactful connections I've made was with a fellow potter who runs a sustainable pottery studio. It's reassuring to know that I'm not alone in my struggles as a business owner, and it's inspiring to see how another woman has been able to create a successful and sustainable business that aligns with her values.” Makers inspiring creativity from all walks of life Cara Bevilacqua “As someone who grew up feeling a bit like an outsider, I relied heavily on my passion for creativity as an outlet for my feelings and emotions. I feel it is my duty to use my platform as a business owner and creative instructor to include those who may need to feel the embrace of inclusion.” Kelly Ortega “Equity needs to be spread throughout the way we do business, the way we interact with each other, and even the way we think about what we should expect from one another. Through equity, we are moving forward towards liberation for all.” Amy Beggs-French “Appreciating where people are at and supporting my students to play with their creativity produces some really incredible, diverse results! What people can produce and create when they are feeling safe, equitably supported and encouraged is awe-inspiring.” Sampada Gurung “Everyone should have equal opportunities to pursue their passions and to access resources that can help them grow and develop. We're committed to providing accessible and affordable learning experiences that empower our students to discover their creativity and pursue their goals.” ...

Everything You Need to Know About Macarons
By John Tabari
Learn about the history of macarons at baking classes in Sydney It may surprise you to learn that macarons did not originate in France. WeLearn about the history of macarons at baking classes in Sydney It may surprise you to learn that macarons did not originate in France. We imagine that this quintessentially French patisserie could only be the work of a French pastry chef. But, according to historic records, macarons date back to 8th century AD. With the first recorded instances baked in Venetian monasteries. The macaron came to France with Catherine de Medici, when she married King Henry II in 1533. Her pastry chefs continued to make these meringue-based biscuits for her when she moved over to Paris. According to one controversial Encyclopedia entry, it was two French nuns who invented macarons. The text claims that the dessert gained popularity when two Sisters baked and sold macarons during the French Revolution. They used their venture as a way to fund their housing while they were seeking asylum. Yet, those macarons were not the ganache-filled treat we know today. Those macarons were two meringue cookies atop one another, without any filling. As with the invention of the original macaron, there is a discrepancy about how the modern version was invented as well. Two French chefs claimed to have invented the sweet fillings; Claude Gebert and Pierre Desfontaines of Ladurée. They are both credited with having introduced a third layer to the sweet in the early 20th century. French or Italian Recipe? Although macarons originated in Italy, some 17th century Italian cookbooks include ‘French Macaron’ recipes. In any case, there are two distinct methods to making macarons; the Italian way and the French way. The difference comes from the meringue part of the recipe; specifically when to add sugar. The French recipe calls for egg whites to be whisked into meringue shapes before powdered sugar is folded in. The Italian method includes adding sugar to raw egg whites to make a paste. Today, the accepted method to bake macarons is closest to the French recipe. Ladurée Although macarons didn’t originate in France, we have a French patisserie to thank for their lasting popularity. Ladurée has been around for over 150 years. It was founded in 1862 by writer, Louis-Ernest Ladurée. The original location burned down during a late 19th Century uprising, so a second popped up. It was at the second location that the founder’s second cousin, Pierre Desfontaines, created the ‘Double decker’ macaron. This refers to two traditional macarons on top of one another bound together by a creamy, usually ganache or buttercream, filling. The steady increase of these stores outside France attests to how popular the macaron has become. Ladurée is now present in almost 20 cities in Europe and many countries across four more continents. International Interpretations Keeping with the tradition of adapting the original recipe, may other cultures now produce their own versions of the dessert. In the States, the composition of macarons remains the same, but the flavours are much more experimental. In France, you will find classics such as pistachio, raspberry and chocolate. In the US you can buy peanut butter and jelly, pumpkin, cheesecake and candy corn. In Southeast Asian countries, recipes substitute traditional ingredients for local variations. Almond flour is substituted for peanut flower in Japan. Taiwanese recipes incorporate red beans and South Korean recipes use green tea leaves or powder. Discover the best types of macarons here. Pop Culture In Japan, where food can be cute, the macaron is a popular print for fashion items, stationery and even bedding. Simple and colourful, they decorate clothing and accessories along with other foods such as fruit and sushi. In their attempts to create a more upscale image, McDonalds’ McCafe branches sell macarons in France and Australia. Interestingly, they are produced by a company owned by the same holding company as Ladurée. Yet, they don’t use the same recipe; McDonalds has a more limited flavour menu than Ladurée, offering six classic flavours. Ladurée, whilst not as experimental as some US macaron producers, does offer a wider range of French favourites. These include speculoos, rose and salted caramel. ...

Make Your Own T-shirt with Screen Printing
By ClassBento Team
As a teenager in a primary school art class, I had no idea what screen printing was, but from what I could see of the press in front of me, it wasAs a teenager in a primary school art class, I had no idea what screen printing was, but from what I could see of the press in front of me, it was going to be complicated. The contraption had several limbs branching out at different angles like some kind of advanced, spinning robot ready for take-off. The metal base was dripping with ink in various bright colors. “I’m going to use that?” I asked my teacher. She shook her head with a smile, “That’s a little advanced for you. Don’t worry, we’re going to be working with individual screens for now. It’s still a little complicated, but you’ll have fun.” Over the next two weeks, I spent hours designing, cutting, aligning, and squeegee-ing on various types of paper and fabric. There were times when I wanted to pull my hair out and times that I was ecstatic with the outcome, but usually I was just extremely focused on my work. By the time I had completed my first project - a tricolor work that would probably make Andy Warhol cringe - I was hooked on the hobby. I couldn’t wait to show off my freshly-pressed artwork to friends and family. I actually started to make my own t shirts with screen printing!! “Just wait until you learn more about the history,” my art teacher prodded. Indeed, screen printing has an interesting tale to tell. The art form has a surprisingly long history, with Polynesian Island natives producing the first images by seeping ink through banana leaves over 1500 years ago (1). Similar techniques popped up in China and Japan, where they developed in sophistication and skill. At the 1853 World’s Fair, Japanese goods were lauded by European and American artists, who sought to learn and commercialize the art form. Though screen printing wouldn’t show up in Australia until the second World War, other forms of printing have always been a crucial part of the country’s history (2). For instance, a humble little device came over with the first fleet in 1788, though it was incomprehensible to all crew members. Once the newcomers learned how to use the press, printing exploded in the form of newspapers and informative books on exploration of the continent. This type of production was usually relegated to the commercial sector, and wouldn’t become popular as an art form until the 1970’s, as a result of Andy Warhol’s explosive entrance into the art world. As an American artist, Warhol’s most famous works depict American popular culture, such as his iconic renditions of actress Marilyn Monroe in the 1960’s. As a result of his pioneering endeavors, artists all over the world began experimenting with silk screens. The craft became particularly popular in Aboriginal communities, specifically in Bathurst Island and at Gunbalanya, where much of the printmaking took place on fabric instead of the otherwise popular paper (3). Over the next few decades, this style would become an integral piece of Aboriginal fashion design, with artists showcasing their work in art galleries, Parisian fashion venues, and international cultural exhibits. Considering its humble beginnings, screen printing has certainly had an interesting journey. Today, many individuals, with or without an artistic background, are exploring the craft by attending printing classes. In fact, ClassBento offers a class in Marrickville lead by Carizza Teague who studied the art form at the Eastern Sydney Institute of Technology and has been teaching it for seven years. You may be as surprised by a beginner’s class as I was the first time I saw a screen printing press, but there’s no doubt that you’ll enjoy your first experience. Here are a few fundamental aspects to the process that may help you prepare for your first class. First, the materials This type of printing requires a pretty particular set of objects. Most notably, the screen, which is generally a wooden frame fixed with a thin semitransparent film. You will also be provided with a squeegee, emulsion liquid, printing ink, and testing fabric (although you should bring your own fabric for the finished project: think tea towels, tee-shirts, or tote bag.) Your instructor will have a light box to help the emulsion process along quickly. If most of these items seem foreign to you, that’s okay. Your instructor will explain everything! Churning out your work So, all you need is a screen and some ink right? Why all this other stuff? Well, it’s a little more complex than just seeping ink through a film. Carizza’s class uses a photo emulsion method, which requires the following steps: 1. You design a creative graphic. Anything you want! Elegant lettering, your dog, your best friend, the sky’s the limit. 2. You create a transparent version of your beautiful image that will be stripped away after the emulsion process (your teacher will help you with this part.) 3. You prepare for emulsion by fixing your image to a screen, which has been covered with the emulsion liquid. 4. When you expose your screen to light, the emulsion will harden where the liquid is exposed, allowing you to eventually strip away your transparent image. 5. What is left is a kind of stencil through which you can squeeze ink onto fabrics, shirts, and paper products! As a beginner, you will probably be satisfied with sticking to one color for your graphic, creating a minimalist work of art that will astound your friends and family. But, as you advance in your practice, this method can incorporate more and more colors into your work (just remember, each step usually requires a completely new graphic!) In other words, whether you're interested in a novice understanding of screen printing, or you want to take it to the next level, you can be sure that there’s never going to be too little or too much that you can do with your art. You may even advance to larger printing presses! So, don’t be shy! Anyone can make a beautiful graphic using this method, and there’s nothing quite like showcasing your work as part of your daily wardrobe. Terrarium Making Ideas

Terrariums are a great outlet for your creativity - there are just so many different ways you can put them together. Here are some of our favouriteTerrariums are a great outlet for your creativity - there are just so many different ways you can put them together. Here are some of our favourite designs. Wall-mounted terrariums Use magnetic metal containers, and stick your terrariums to your walls. Free up your desk space and build your vertical gardens. Pair your terrariums with some funky wall hangings or other home decor. Terrariums in light bulbs How's that for a light bulb moment? (Sorry, that was too easy!). Instead of throwing your burnt out light bulbs, why not give them a new life? Food-inspired terrariums A perfect way to add some chic earthiness to your table. Beyond tea cups and cake stands, you can easily extend on this concept by doing terrariums in glass water jugs, cookie jars, soft drink bottles, spice containers, glass teapots, old coffee plungers - sky's the limit. Recycle those beautiful old containers and don't let them go to waste! Hanging terrariums Perfect for your veranda or balcony, or even as a room's centrepiece, as a modern version of a chandelier. Coastal terrariums There are lots of themes you can explore with terrariums, but a classic is the coastal theme. Succulents are the star, and you can add seaside pebbles, sand and little shells to complete the look. If you you're a bit far from the coast, this is a great way to bring a taste of the ocean to your home or workplace. Feminine terrariums Terrariums are great no matter your gender, age or background, but certainly if you want to amp up the femininity, try adding some flowers and perhaps some marble. Focus your plant selection for an amber-pink hue, and you'll have a pretty terrarium any lady would be proud of. That's it for now! Join a terrarium class Excited? What do you think of when you see the word ‘learning’? I think of a classroom. I think of an older person, lecturing. One-way communication. IWhat do you think of when you see the word ‘learning’? I think of a classroom. I think of an older person, lecturing. One-way communication. I think of rote learning, memorisation, assessments. I think of stress and boredom. Learning as outcome based, and competitive. Learning for advancement in society, without much choice involved. I’ll bet that you thought of some of these too. But can learning have the opposite effects? Can it reinvigorate, inspire, entertain? Can it do this while giving a sense of personal achievement, progress and enlightenment, that many of our modern means of entertainment (which typically have us as passive audiences, like TV) could never hope to achieve? I think so. I think that’s just scratching the surface. It won’t be easy to transform Australian society’s traditional view of learning. But at ClassBento, we’ve made that our mission. We think that Sculpture by the Sea is a great success story of how a team of passionate individuals can quickly put a different lens on something that have been around for millennia. Let’s see what we can learn from them. What would you have thought of ‘sculptures’ 10 years ago? I thought of boring old displays in museums, and high-priced auctions for the ultra rich. Inaccessible and irrelevant. Sculptures were for someone else, not me. Then came Sculpture by the Sea. Sculptures became massively accessible, at least for residents or tourists of Sydney. They were literally placed in the open, 100% free for anyone to see and play with. By being on spread out across the Bondi to Coogee walk, these sculptures inherited characteristics we normally associate with our beaches. Fun, spontaneity, tranquillity, beauty, local, Australian. People discovered that sculptures could be thought provoking, relatable, a social experience. Sculptures could be new, fresh, and relevant, reflecting the times that we live in. Sculptures could stretch our imagination, and give us feelings of awe, sadness, and everything in between. Sculptures could get us to question our place in the world. Sculpture by the Sea transformed how we think and feel about sculptures. There are plenty of other examples. What do you think of when you hear about ‘philosophy’? Abstract concepts preached by aged professors pondering away in ivory towers, like the existence and role of God, metaphysics, debating the definition of ‘knowledge’, ‘art’, ‘morals’; concepts utterly irrelevant to our modern lives? The School of Life is transforming philosophy’s place in our lives, and aims to improve our emotional intelligence. It draws on philosophy (as well as the humanities) to help us approach topics like love, relationships, death, careers, happiness and more. Topics that are often ignored by traditional schooling. Meanwhile, Masterchef has changed our perception of cooking from being a chore, to being cool, inventive, fun. There are lots of other examples, but Shakespeare tells me that ‘brevity is the soul of wit’, and I’d like to be seen as witty. To sum it up, the arts are being re-imagined to fit our modern lives. So what’s the future of recreational learning? We think that learning should still be recognised for its crucial traditional role, in preparing us for the necessary routines, complexities and customs of modern life. But we’d love people to change their perception of learning, from just thinking of learning as both learning for advancement, to also thinking of recreational learning. A few years from now, we’d love Australians to list recreational learning (like the sort offered by ClassBento) as one of their top pastimes, alongside current favourites like sport, etc Granted, it’s not for everyone or for every occasion. Sometimes our brains and bodies just can’t take anymore, and we do want to just veg out in front of a screen and be passively entertained. But there are certainly enough of us, who have enough hours in a week, who would prefer active entertainment, with all of the unique advantages it brings. How role will ClassBento play? Uncover hidden gems: In performance arts, artists don’t need a degree or qualifications to entertain, inspire, to change the world. In fact, going through the dogmas of formal schooling can dampen the creativity and uniqueness that makes art so wonderful. In contrast, we often assume that teachers must have years of formal education, to then be able to educate us. But similar to performers, skilled recreational teachers are everywhere. They just need to see the opportunity, to access a good platform. ClassBento will show them their podium. Make it easy: Education is often administrated by government, and as such it often lags behind in technology adoption, and gets tied up in red tape about what can and can’t be done, by rules and regulations. One result is the 10-page checkouts on community education sites. ClassBento will make it easy. Make offline cool again: Sure, some learning is best done individually, online, by watching demonstration videos, and reading manuals. Boring stuff like programming and statistics are some examples. But this approach isn’t suitable to every subject and every person. Humans are social creatures. Nothing can quite substitute for interacting with others in person, and using all our senses and expressions. And some subjects won’t make the transition to online easily. Imagine how difficult it would be to learn to dance, in your living room, watching a video. Or to learn how to sing, without real-time feedback, inspiration and motivation from a voice coach. ClassBento will bring offline back. Make it known: We’ll spread the word. We’ll celebrate our gifted teachers. We’ll celebrate the pleasure of learning. We’ll let Australians know that they have other options for what they can do on weekends, how they can spend time with loved ones, how they can find like-minded friends in their communities. ClassBento will lead the way. It’s an exciting future, and we can’t wait to get there with you. ...
Try Not to Smile in an UKulele Class

It’s difficult to imagine a happier instrument than the ukulele. Light, twinkling musicality aside, the mere appearance of the small stringed-instrument,It’s difficult to imagine a happier instrument than the ukulele. Light, twinkling musicality aside, the mere appearance of the small stringed-instrument, miniature and cute, invokes a feeling of joy. Just do a quick search for ukulele covers of your favorite songs, or attend music classes in Sydney and try not to smile. The ukulele conjures up images of the shores of Hawaii, where island breezes carry the scent of floral hibiscus and the crashing of waves can always be heard somewhere in the distance. When considering its origin, one might imagine an islander suddenly stumbling upon the instrument leaning against a palm tree, forever changing the musical world. But the history (1) of the ukulele has a much more intriguing past, stemming from Portuguese immigration to the set of islands in the mid 1800’s. As early as 1879, shiploads of immigrants from the islands of Madeira and the Azores arrived in Hawaii as farmhands to work in sugar cane fields. Of the many items they brought with them, the machete de braga, a four stringed instrument, was arguably the most entertaining. At the end of a long day in the fields, families would sit around campfires singing traditional folksongs before resting up for the next grueling day of work. The music was probably first heard by the indigenous population when the Portuguese community gathered at the docks of Honolulu to welcome new immigrants to island. The popularity of the stringed instrument spiked, soon becoming the star of street-corner concerts that the newcomers and established population could enjoy together. Fascinated by the energetic strumming of the machete players, island natives renamed the instrument ukulele, Hawaiian for jumping flea. Even local royalty adopted the new toy. King David Kalakaua, an accomplished musician, brought the ukulele to a wider audience by naming it Hawaii’s national instrument. Subsequently, some minor changes were made to the ukulele, utilizing koa wood and altering the tuning to make the instrument more portable and enjoyable to play. The next century saw rises and falls in ukulele popularity akin to the very sea from which the instrument originated. There are many detailed histories (2) on the subject, starring iconic American legends like Elvis Presley and Bing Crosby. Today, the uke is experiencing yet another revival, with vloggers posting covers of the latest popular songs, and well-known bands playing their own songs with the happy little instrument. Which is good news for those who have been voicing the benefits of learning the ukulele for years. That’s right. The ukulele is entertaining and good for you. Here’s why. Neuropsychologist Daniel Levitin, a professor of music at McGill University in Montreal, provides some uplifting news on the efficacy of music intervention and clinical music therapy. According to him, scientific studies have found that particular types of music, be they upbeat or downtrodden, influence hormones in the brain, creating increases or dips in blood pressure. The key is, he says, for the individual to find music that most influences him. A doctor cannot prescribe classical music and assume that it will affect every patient the same way. Music is subjective, in other words. The interesting thing about the development of music intervention in today’s society, says Levitin, is that people are already using music as treatment method without really thinking of it as medicine. Companies like Spotify and Apple Music, for instance, have capitalized on this practice by arranging playlists based on moods, location, and activities. It seems that we as a society have already figured out what psychiatrists are testing, namely that music influences our emotions. The field of psychology is taking it one step further by asking whether music therapy can be used to treat more serious cases of psychiatric disorders. Harvard Review of Psychiatry (3), for example, published a study in 2011 exploring the effects of music on patients with various mental illnesses, including depression, schizophrenia, and anxiety, among others. They found that in some cases, music could actually be used as an alternative to traditional treatment regiments. Of course, the results need to be tested further, but this is incredibly exciting step for those looking for alternatives to invasive types of therapy, like medication or electroconclusive therapy (ECT). Overall, listening to music is a great way to boost mental health and help deal with certain psychiatric illnesses. So if the ukulele is the instrument that gets you smiling, you can make a conscious choice to improve your wellbeing by incorporating ukulele tracks into your daily routine. But wait, there’s more! Research shows that while listening to music has a great influence on wellbeing, playing music has an even stronger impact on mental health. Some benefits, according to Levitin, are cognitive improvements as a result of attentional training. He goes on to point out that children who are exposed to music classes are more likely to be well-socialized later in life. In support of Levitin’s claim, a study (4) out of Canada suggests that children’s participation in music lessons leads to an increase in social cohesion as a result of sympathy and prosocial development. There are various theories as to why learning to play music may contribute to changes in these behaviors. One idea is that the ability of music to bring humans together may have played a role in the survival of our ancestors. In related studies, music lessons have been associated with cognitive functioning improvements in language skills, visuospatial abilities and memory. Such findings even linked music classes to higher intelligence and academic success. Clearly, listening to and playing music is beneficial to our mental health as well as our social interconnectedness. And what better way achieve both than to add a little ukulele to your life? Those who have tried out ukulele classes rave about the joy of learning to play the instrument. Luckily, because of a recent increase in ukulele workshops and classes in and around Sydney, it is a great time to take up the hobby. For a traditional class, try signing up for the ukulele class in Bondi Beach with Dan Allen. References: (1) museumofmakingmusic.org (2) theatlantic.com (3) tandfonline.com (4) journals.plos.org ...
The Colourful History of Jewellery Making
By ClassBento Team
I'd never tried jewellery classes in Sydney before. When I was a kid, my mother took me to meet one of her friends for an afternoon lunch. WeI'd never tried jewellery classes in Sydney before. When I was a kid, my mother took me to meet one of her friends for an afternoon lunch. We had to pick her up at her house, she explained, because Betty was blind and couldn’t drive herself. Having never met a blind person before, a flood of wonder and curiosity washed over my young mind: What would she be like? Would she be sad? What did she do if she couldn’t watch television? When we pulled up the gravel driveway, Betty was already at the doorway, ready to greet us. She was smiling and waving, and with her dark sunglasses, you wouldn’t even suspect that she wasn’t look straight at us. After introductions, Betty invited us inside for some iced tea before we went to the restaurant. As she turned to lead us into the house, I was mesmerized by her beautiful cascade of silver hair, pinned back with the most intricately beaded hair clip I had ever seen. The clip was an oval about five centimeters long and a few centimeters high and was adorned with blue, red and yellow beads arranged in symmetrical patters. It reminded me of the mosaics we had learned about in school, yet somehow more impressive because of the minuscule size of the beads (I later learned that they were called seed beads.) They were so small; you could almost mistake the entire thing for patterned fabric. My mother smiled. “She makes those herself, you know,” she said. Though she couldn’t see my expression, Betty sensed my surprise and laughed. “It’s true,” she said. “Come on, I’ll show you my collection.” Betty lead me to a spare room, where she had set up a workshop. On top of her desk, she had everything to make the intricate clips: rows and rows of brightly colored beads, spools of thread, various sizes of scissors and pliers, and strips of leather. Pinned up to the wall in neat columns were her finished products. Reds, blacks, oranges, greens, and blues. They were impossibly beautiful. Watching Betty show off her art made me realize how important beadwork was in her life. Just standing in her workshop, she was relaxed and full of joy. For the rest of the day, I couldn’t stop thinking about Betty making those incredible hair clips. I had always enjoyed making crafts with beads at school, but I couldn’t imagine creating something so detailed. My mother explained to me that the beadwork was an integral part of Betty’s heritage as a Native American of the Owen’s Valley Paiute Nation in the United States, and she had probably learned very young. Not a lot of people have an interest in learning the craft anymore, she told me sadly. Intrigued, I started researching the history of jewellery and beadwork on my own, finding a cultural history as elaborate as Betty’s art. History of Jewellery Making Jewellery, which in its most primitive form constituted decorative shells, bones, and colored rocks, is thought to be older even than clothing. As humans began settling into communal agrarian societies, in Mesopotamia and Ancient Egypt, jewellery developed into more ornate and sophisticated forms of art, alongside concepts like religion and governance. At this moment in history, jewellery began gathering social significance. For example, the tomb of the pharaoh Tutankhamen, whose treasures are housed at the Egyptian Museum (2) in Cairo, is still the largest collection of jewellery in the world, and gives modern historians a good idea of the opulence afforded only to the most powerful royal figures of the time. The next few centuries saw an explosion of jewellery trading that solidified the art as a staple of almost every European, North African, and Middle Eastern civilization. A historian can dedicate a lifetime to a single island in the Mediterranean, like Crete, and never learn everything there is to know about jewellery in the Ancient World. The waters are simply too deep. At the same time, on two completely separated continents, jewellery was weaving another historical thread in North and South American settled societies. In Central and Southern civilizations, like the Aztecs and Mayans, silver and gold were popular materials for ornamental pieces. For Western tribes, like Betty’s, early forms of jewellery consisted of natural materials, such as shells, silver, ivory, colorful stones like turquoise, etc. European colonists, surprised no doubt to see such beautiful jewellery in the New World, introduced glass and seed beads in the 16th century, revolutionizing Native American art. Today, Native American nations throughout the United States continue to produce beaded moccasins, hair pieces, and baskets to preserve the tradition. With such a diverse and vast history of jewellery in human civilization, it is no surprise that jewellery continues to be a key part of almost every society in the world. But in this age of mass-production, is there a way to preserve the age-old tradition of jewellery making? Is it even worth it to try? Scientists say we have a very strong incentive to keep jewellery making around, namely its potential to improve our mental health. One study (3), lead by Carolyn Adams-Price and Bernard Steinman of Mississippi State University, reviewed the impact of jewellery making on the mental wellbeing of 29 Canadian and American women, aged 31- to 64-years-old. All participants reported a psychological benefit, while 24% said that they experienced an increase in happiness and self-worth in particular. The organization, Bonita Bead Boutique (4) in the United States, has recorded similar effects, from reduction in stress-related illness to improved cognitive function, in individuals participating in jewellery making for the first time. Getting involved in jewellery making is incredibly easy. Jewellery making workshops are taught all over Sydney. Check out the long list of beginner’s classes by Chris Smalley: 1) Earring making 2) Beaded jewellery making and 3) Jewellery repair and upcycle Because of the broad definition of jewellery, there are endless options for beginner’s classes, based on your personal preferences. A typical introductory class will teach the basics of anything from beadwork to simple silver- or silicone-molding to creating your own porcelain beads and pendants. Inside a DIY Terrarium Class

Spoiler alert! If you'd like to discover the magic of terrarium making for yourself, go ahead and book yourself in, and read no further. ButSpoiler alert! If you'd like to discover the magic of terrarium making for yourself, go ahead and book yourself in, and read no further. But if you're curious about what exactly happens in a terrarium workshop, I'll be sharing my personal experience with you in detail. Entree I stepped into the Merchant and Green floristry, where the walls are adorned with flowers and shrubs of all kinds, ranging from classics like roses and tulips, as well as Australian natives, through to more exotic (at least for me) flora like cotton. I also learned that there was a Happy Plant in the corner, as well as a Mother-in-laws-tongue (yes, those are really their names! Interesting names for interesting plants. Scientifically, they are Dracaena sanderiana, and Sanseveria respectively). The space had a relaxing vibe. Perfect for stopping to smell the roses (yes, I did that literally too). A table sat in the centre of the room, on top of which were neatly organised terrarium ingredients, giving me a sneak glimpse into the fun ahead. I was greeted by Chris and Mitch from the Merchant and Green team, as well as the other students. Our hosts offered us beverages, and we got to know everyone through a bit of light conversation. We flipped through a little book that Chris had recently acquired, all about terrariums. It reminded me of a cookbook, with recipes for the various types of terrariums, containing detailed lists of ingredients, preparation steps, as well as inspiring and appetising photos. We put on our aprons, and dove eagerly into our first course. Second course Chris showed us the various glass containers we could build our terrariums in. We opted for large circular 'fishbowl' vases, though also available were triangular prisms (a bit more challenging), as well as smaller spherical containers, which can be hung. For those who have a bit more time to spare in a more advanced class, larger terrarium containers are a great choice for indulgence - they allow for more plants, and are perfect for events which you don't really want to end too early (think hen's parties and other special occasions, or a fun team outing). Chris explained that we'd be building up our terrarium in layers, and the purpose of each layer. We also saw a finished terrarium, 'one prepared earlier', to get a better sense of the end goal. The first layer is foundation of stones, which encourages sufficient drainage for our little ecosystems. We each chose from smooth white pebbles, river stones of assorted colours and shapes, and smaller grey stones - you could build this layer with one or a combination of these, with each stone type providing a different aesthetic. Of course, there's a bit of finesse required - it isn't just about dumping stones haphazardly into a bowl! The layers have to be of the right thickness and elevation, to ensure that the ecosystem you're building is conducive to healthy plant life, and to ensure that you end up with a visually appealing terrarium. Chris and Mitch made it all easy though, with their detailed instructions and demonstrations. They also gave plenty of one on one advice (and hands-on help) where needed, while still giving us plenty of space to play and explore by ourselves. Third course Next up was a layer of special moss. The moss plays a crucial role in the terrarium, holding any water you put in, to ensure that your little plants can drink up just the way they like to. The moss came in stringy brown fibres, and smelled very earthy, and reminded me of a forest's scent. We made a little mattress with this moss, which was soft and springy, in contrast to the hard rocks just beneath. My 'layer cake' was starting to take shape! Responding to questions, Chris gave some advice on how to water our terrariums, and the best position(s) in our living spaces for them to thrive. We also got to learn a bit about the history of terrariums, on how they came about. Chris was a great conversationalist, and kept us engaged throughout. Learn more about making terrariums here. Fourth course Next, we added a layer of soil, spooning it generously into our vases. Then Mitch brought out the stars of the show - a tray of petite succulents. There was a wide variety to choose from - short, tall, spiky, smooth, dark, light. On this day, there were over 30 plants to choose from. They reminded me of petit fours, due to their size, variety, and cuteness. Some reminded me of a blossoming lotus or camellia, with their intricate and petal-like leaves. We had a hard time choosing from that feast of options, there were just too many pretty choices (and the plants change with every workshop, so no two workshops are exactly the same). Chris gave us some helpful advice as to which plants would best suit each of us. For example, some plants are slightly harder to maintain (I avoided those), while some plants pair particularly well with others. We eventually settled on our choices (I picked out a tall 'jellybean' shrub, as well as a unique succulent with pink-tinged leaves), and gently shook the plants free of their little pot homes. We trimmed their roots down, so that they would fit comfortably into the soil layer that we had just laid down. The plants are quite delicate, and in some cases a few leaves fell off, but not to worry - Chris showed us how you can actually grow new plants from these leaves, using just a moist paper towel as their initial incubator. Then came the planting. Just like normal planting, just in miniature form. We dug out tiny spaces for the roots of our plants, snuggled them in, and back-filled with soil to ensure that they would be nice and secure, and be able to pass the 'wobble test'. Dessert They saved the best for last. It was now time to put our finishing touches on our terrariums. The icing on the cake! Chris showed us a few styling options, and gave us a few ideas. Would we make a little Zen garden, with a clean and symmetric appearance? Or a natural landscape, one you might find by a riverside? With perhaps rolling hills and gentle valleys, to give more depth to our landscapes? We had a wide variety of stones to work with, from large 'feature' stones of various colours, sizes and textures, to the smaller stones that we used for layering before, as well as some mosses. I sprinkled a fine gravel-like mix to cover the soil, and accentuated it with a larger white pebble, as well as a few smaller coloured ones, somewhat randomly scattered, for a natural and contemporary look. I got lost in the moment - it was so much fun designing and playing with my miniature garden. This was the part where you could be really creative and try out different ideas. Just like a chef would dab at a plate with a cloth to clean up its appearance before serving, we too dabbed and finessed to finish off. It was incredible to see everyone else's finished terrariums. From the same set of ingredients, we had each created very different looking enclosed gardens (though all of them looked great). The whole experience was a great chance to just take some time for myself, to get away from technology and closer to nature. If my story sparked your appetite, go ahead and attend one of our future terrarium classes. The team at Merchant and Green also provide lovely workshops on making Kokedama (Japanese-inspired moss balls), as well as flower arranging with Australian natives, and with seasonal blooms. The classes are perfect for individuals, as well as couples, and larger groups. Until next time! Iain for the ClassBento team ...

I'd highly recommend these classes for corporate teams, groups of friends, or anyone looking for a fun and interactive experience. It was such a fantastic event, and the best part was that so many people emailed me the next day to thank me for organising it. Everyone had an amazing time, and I'd definitely do it again!” Can you request a private class? Absolutely. Honkas offer private classes daily for 10 to 70 people. 3. Pizza masterclass with lunch Sitting down for a pizza, a little basic, but what about mastering the art of pizza making, then eating your own creations? In this Melbourne-based class, you and your team will be welcomed with a coffee before diving right into the dough-making process together. This is a great chance to chat about tips and tricks, or simply talk about holiday plans and New Year's resolutions. After making your dough, everyone will head into the kitchen to stretch their pizza and watch the chef cook it to perfection. The whole team will finally get to enjoy the fruits of their labour—a delicious pizza paired with a glass of wine or a non-alcoholic beverage of their choice. Now that’s a pizza party that’s not only social but will give your team a bunch of new skills to take home and try out, too! Can you request a private class? Yes, you can, for 15 to 30 guests. Turn it into a full event with these top Christmas function ideas for workplaces. 4. High tea and gin tasting If the team would like a little luxury, head to Bass and Flinders Distillery in Melbourne for a gin high tea tasting experience. Although high tea doesn’t always seem like a filling lunch, in this case, it is! Recent taster, Travis B., was “surprised by the amount of food,” and wants to come back for lunch with a friend! You and the team can settle into this peaceful distillery setting and celebrate the season with a laid-back festive afternoon. You’ll each get to sample exquisite local fare and hand-crafted gins, all while discovering the unique history and craft behind every pour. “Amazing experience. Fabulous tasting and best high tea we’ve ever had. Superb ingredients in everything. Lovely staff. Definitely worth doing.” - Mandy R. Can you request a private tasting? No, but you can book for up to 20 guests. You may even get a sunny spot on the balcony for the ultimate summer vibes! 5. Food and street art tour How about an adventurous idea for your work Christmas lunch? If you and the team are based in Sydney, try this Newtown food and street art walking tour. Gather the team and immerse yourselves in a delicious journey through colourful Newtown. Kick off at the iconic "I Have A Dream" mural on King Street for a quick taste of the area's history, then explore three to four multicultural food stops—with plenty of vegetarian and vegan options included. The cuisine options you’ll explore include Egyptian, Turkish, Italian, Japanese, “Australian” and more! Walk and talk as you take in Newtown's famous street art before wrapping up with a craft beer tasting at a local brewery. It’s always good to get moving around Christmas time, when our bodies need preparing for all the feasting we’ll be doing (even if we are indulging in some nibbles along the way!). Can you request a private tour? Yes! For 6 to 30 guests. 6. A Spanish cooking class Spanish cuisine like Tapas is festive by nature—the sharing, the sangria, the music everyone can’t help but dance to! Grab your team and head to this Spanish cooking class in Adelaide and get ready to be praised for the most delicious work Christmas lunch ever. You’ll all be making an entire Spanish menu from croquettes to paella to churros and a whole lot of dishes in between—of course, you’ll all be able to eat your creations over lunch, too! “We had a fantastic day with my team during a cooking bonding session this week. The staff was amazing, providing a welcoming and supportive atmosphere from start to finish. The activity was a perfect break from our usual routine, offering a unique and enjoyable way to bond. Everyone had a blast learning new recipes and techniques. The cooking session was well-organised, educational, and a lot of fun. I appreciated how the staff accommodated everyone’s dietary needs, ensuring that everyone felt included. I would absolutely do it again.” - Sinead M. Can you request a private cooking class? Yes! For 16 to 30 guests. 7. French dinner with live music If you want a hint of a traditional work Christmas lunch with some pizzazz, try this French bistro dinner with a side of live jazz! (It’s so fun it made us rhyme). Here, your team will sit back and relax in a beautiful rustic venue and enjoy being treated to a luxury six-course French feast with the charming vibes of a 1930's 'Paris Jazz Cafe'. This one’s a dinner, not lunch, so you may have to double-check people’s availability, but Christmas is the time to come together over shared food, music and warm vibes, so this may just be the perfect twist on that classic team ‘lunch’. Can you request a private dinner? Yep! For 13 to 36 guests. Whether you choose a hands-on culinary workshop, a vibrant street food tour, or an interactive cocktail class, you’ll have your team connecting, celebrating and enjoying enough to get well into holiday mode. Plus, any of these ideas for your work Christmas lunch is a party the team will talk about well into the new year! ...
