Fermented foods are high in probiotics and very healthy for the gut. Koji (also known as Aspergillus Oryzae) is made with an organic starter and prepared over a fermentation window of 48 hours.
In this two-part course, you will learn how to make your own koji so you don't ever have to worry about buying it from the store again! In the first session you will learn the basic steps of making koji. In the second session, you'll learn how to use use Koji to make either delicious Shio Koji for cooking any home meal or something your interest (soy sauce or miso).

What you'll get in your craft kit
Option 1: Class with koji kin
1 packet of Koji starter
please indicate your purpose of koji so that the correct type of starter can be sent to you---either miso or soy sauce.
Option 2: Complete box
  • comes with 1 small fermentation bag with temperature control worth $50
  • 1 koji kin (from Japan) $25
  • 1 wooden sushi box for koji making $35
  • 1 steamer cloth $4
NOTE: This is a koji making class. Not miso and soy sauce making class.
However you will be guided in session 2 on how to jump start the project.
Email support is provided between the sessions during the koji fermentation process.

What you'll need
  • A steamer (some homework to do before lesson). Please check your message mailbox on ClassBento.
  • a wooden tray (30x20x5.5cm) with some depth or a simple clean wooden box (if you choose option 1)
  • a blender or mixer (for second session)
  • 300g of Japanese rice
