In this rowdy hands-on sausage class, we'll cover everything you need to know to make your own sausages at home, and you'll take away the bangers you make to dazzle your friends and family.

The session is hosted by Sydney’s notorious Sausage Queen, Chrissy Flanagan, the force behind The Sausage Factory and Sausage Queen Brewing. She’s a self-taught sausage maker and has already made every mistake in the book, so you don’t have to!

Class outline:

  • A little history on sausage making, and insights into what makes an extra special sausage.
  • The tips and tricks to make your sausages juicy and gorgeous.
  • How to make sausages from scratch.
  • Time to relax, try a variety of Chrissy’s sausages as part of a banquet lunch.
  • A seated tour of Sydney’s best beers.

With Chrissy’s tried and true recipe formula you’ll develop your own sausage variety, and gain the confidence and skills to come up with new sausages at home.

We'll round out the afternoon with a big lunch, with lashings of bottomless booze throughout. It’s a ton of fun!

  • Two-hour hands-on sausage class, working in groups of two or three.
  • One hour banquet lunch of sausages, salads, pickles and all the trimmings.
  • Bottomless Sydney craft beers, non-alcoholic beers, wines and softies.
  • Your own sausages to take home.
What to bring
  • All participants must wear closed-in shoes.
  • Aprons are supplied.
  • Dress appropriately for the kitchen and tie back long hair.
  • You’ll be taking the sausages you’ve made with you so if you’re not going straight home please bring an esky.
  • Come hungry and thirsty! Let us know if you have any dietary requirements.

The transformation of an old inner west butchery to The Sausage Queen (and brewery - is there a more natural pairing?) is a total success.

Chrissy (HRH, Sausage Queen) is an entertaining and engaging instructor. It felt much more like a mate showing you how to do something and, enjoyably, lacked the formality and rigid structure that comes with some other cooking classes I've experienced.

Groups are small enough to ensure everyone gets the attention and instruction required. The process of making the sausages is pretty straight forward and the ingredient pairing of protein with flavourings is as limitless as in any other form of cooking.

An incredible class, topped off with an absolutely amazing lunch - don't eat breakfast!

The lunch included 3 snags per punter, each a different flavour, a selection of salads and delicious, home made pickled condiments. It was absolutely delicious. They stock a great selection of drinks and beers - both their own, and other locally produced brews.

Highly recommend - you will never buy a supermarket snag again.

Nice little course, very hands-on and fun way to spend a weekend afternoon. The teacher gave a lot of good advice and tips on making sausages. And there’s a nice meal of sausages and condiments at the end of it. And there’s free craft beer throughout.
